Thanksgiving Cranberry Spice “Turkey” Cupcakes with Vanilla Frosting

- For the cupcakes:
- 1 1/4 cups sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter
- 1 cup sugar
- 2 large eggs
- 1/4 cup water
- 1 cup fresh or frozen cranberries
- For the frosting:
- 4 tablespoons unsalted butter
- 4 cups sifted confectioners’ sugar
- 1/4 teaspoon pure vanilla extract
- 6 ounces cream cheese
- For the decoration:
- 1/4 pound each brown, white, black, and orange fondant

- 2 tablespoons vegetable oil
- 2 pounds ground turkey
- 1 onion, chopped
- 2 carrots, chopped
- 1 rib celery, chopped
- 1 green pepper, diced
- 1 yellow pepper, diced
- 2 cloves garlic, minced
- 1 – 15-ounce can white beans, drained
- 1 – 15-ounce can of garbanzo beans, drained
- 1 – 28-ounce can diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 2 teaspoons dried ground cumin
- 2 cups chicken stock
- 2 tablespoons salt
- 1 teaspoon black pepper
- 1 – 8.5-ounce package corn bread mix
- 1 – 15-ounce can of corn kernels, drained
- 1 tablespoons butter (to grease dish)

- 1 bottle stout (or similar dark beer)
- 1 sweet onion, cut into thin wedges
- 1/2 pound fingerling potatoes, cut into 1-inch pieces
- 1 sweet potato, peeled, cut into 1-inch pieces
- 3 medium carrots, peeled and sliced on the bias into 1-inch slices
