Grilled Corn Salad

1.Preheat a barbecue or indoor grill to medium
- 6 ears of corn (husked per directions below)
- 1 medium red onion, diced
- 1 large red pepper, diced
- 1 jalapeño, seeded and minced
- 1 clove garlic, minced
- 1 avocado, diced
- 1/3 cup cilantro leaves, chopped
- 1/2 cup feta cheese, crumbled
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 4 Tbsp lime juice
- 3 Tbsp olive oil
- Salt and pepper, to taste
Cauliflower Mashed Potatoes

Pour 3 quarts of water in a 5-qt stock pot and add 1 tsp salt
- 2 medium heads cauliflower, cleaned and cut into small pieces
- 4 oz cream cheese, softened
- 1/2 cup Parmesan cheese, grated
- 2 garlic cloves, minced
- 3/4 tsp salt
- 3/4 tsp freshly ground black pepper
- 5 Tbsp unsalted butter, softened
- 1/4 cup green onions, chopped (optional garnish)
Salmon Burgers with Wasabi Mayo

To prepare the mayo, whisk together wasabi powder and water in a small bowl until a paste forms
- Wasabi Mayo:
- 2 Tbsp wasabi powder
- 1-1/2 Tbsp water
- 1/2 cup mayonnaise
- 1/2 tsp freshly grated ginger
- 1 tsp soy sauce
- 1 tsp lemon juice
- Burgers:
- 16 oz fresh salmon, cut into 2" chunks
- 2 scallions, cut into 1" pieces
- .5 oz fresh ginger, peeled and cut into small pieces
- 2 Tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 2 tsp Dijon mustard
- 1/2 tsp ground black pepper
- 2 Tbsp unseasoned gluten-free breadcrumbs.
SMOKY BRISKET CHILI

- David's Note:
- Brisket is a hearty cut of beef with rich flavor that can hold up to the robust seasoning in this dish. And it makes for a wonderfully warming meal when the nights grow colder!
- Ingredients:
- 4-lb beef brisket, cut into 3/4" cubes
- 1 medium onion, diced
- 2 poblano chili peppers, seeded and diced
- 1 red pepper, diced
- 1 (28-oz) can crushed tomatoes
- 1 (14.5-oz) can diced tomatoes
- 1 cup beef stock
- 1 Tbsp minced chipotle peppers in adobo sauce
- 3 cloves garlic, minced
- 1 Tbsp ancho chile pepper powder
- 2 tsp chili powder
- 1 Tbsp cumin
- 1 tsp dried oregano
- 1 Tbsp salt
- 1 tsp pepper
- 1 (15-oz) can black beans, rinsed and drained
- 1 (15-oz) can pinto or red kidney beans, rinsed and drained
- Sour cream, shredded cheddar cheese, and sliced green onions, for garnish (optional)
