Creamy Cheddar Cheese Soup with Crispy Bacon & Chives

In a large stockpot over medium heat, render bacon until crisp, stirring frequently
- 3/4 lb. bacon, chopped
- 1 large onion, finely diced
- 2 leeks, thinly sliced
- 2 cloves garlic, minced
- 2 large pimentos or roasted red peppers, diced
- 4 Tbsp. butter
- 6 Tbsp. flour
- 4 cups chicken stock or broth
- 1 12-oz. beer (preferably ale or lager)
- 1-1/2 cups cream
- 1-1/2 cups milk
- 2-1/4 cups grated sharp cheddar cheese
- 3/4 cup grated Colby cheese
- 1/2 tsp. cayenne
- 1 bunch of chives or green onions, chopped
Gingerbread Waffles with a Pear-Walnut Compote

- Waffles:
- 1 cup all-purpose flour
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1-1/4 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/3 cup packed brown sugar
- 1 egg + 1 egg white
- 3/4 cup nonfat Greek yogurt
- 1/4 cup molasses
- 1/4 cup vegetable oil
- 2 Tbsp milk
- Compote:
- 2 Tbsp butter
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cinnamon
- 1/8 tsp salt
- 3 pears peeled, cored and diced
- 1/2 cup walnuts, chopped and toasted
Italian Mac & Cheese

Preparation: Preheat the oven to 325°F
- Ingredients:
- 2 boxes penne or rigatoni, boiled to al dente, rinsed, & reserved
- 3 cups heavy cream
- 6 cups Alfredo sauce, either homemade or store-bought, reserving 1 cup
- 1 cup yellow cheddar, shredded
- 1 cup white cheddar, shredded
- 1 cup Fontina, shredded
- 1 cup mozzarella, shredded
- 1 cup Gruyere, shredded
- Salt and pepper to taste
- 16 slices imported provolone

Chili Tortilla Bake Recipe

In a large skillet, cook beef over medium heat until no longer pink
- 1 pound extra-lean ground beef (95% lean)
- 2 cans (8 ounces each) no-salt-added tomato sauce
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1 can (4 ounces) chopped green chilies
- 2 tablespoons dried minced onion
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 6 whole wheat tortillas (8 inches)
- 1 cup shredded reduced-fat cheddar cheese

Orange flavored. Chill dough
- DIP CHOCOLATE:
- 1 pound butter,(2 cups melted)
- 2 cups powdered sugar, do not sift
- 1 cup sugar
- 2 eggs
- 2 teaspoons orange extract
- 1 teaspoon orange zest
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt(critical)
- 4 1/4 cups flour, do not sift, just level
- 1/2 cup of white sugar(put in a small bowl for later)
- 1 stick of butter
- 2 cups chocolate chips
- melt in microwave oven 90 seconds, stir heat to melt if not melted, do 20 seconds at a time.

- 1 teaspoon chicken bouillon granules
- 1/4 cup boiling water
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 3/4 cup half-and-half cream
- 1 cup shredded Swiss cheese
- 18 slices snack rye bread
- 6 ounces sliced deli turkey
- 1 small onion, thinly sliced and separated into rings
