Creamy Beef & Potatoes Recipe

Place potatoes and water in a microwave-safe bowl
- 4 cups frozen O'Brien potatoes
- 1 tablespoon water
- 1 pound ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
- 2/3 cup 2% milk
- 2 cups (8 ounces) shredded Colby-Monterey Jack cheese
DUMPY PUMPKIN CAKE

Preparation: Preheat the oven to 350°F
- 1 (15-oz) can pumpkin puree
- 1 (10-oz) can evaporated milk
- 1 cup dark brown sugar
- 3 eggs, slightly beaten
- 2 tsp pumpkin pie spice
- 1 box yellow cake mix
- 1 cup coarsely chopped pecans
- 1/2 cup broken graham crackers (not crumbs)
- 1/2 cup toffee bits
- 2 sticks butter, melted
- Whipped cream (optional garnish)
Apple Mac & Cheese with Caramelized Onions

- 1/2 cup butter
- 6 cups onion, thinly sliced
- 3 Granny Smith apples, peeled, cored, and medium dice
- 5 Tbsp flour
- 3-1/2 cups milk
- 1 tsp fresh thyme, chopped
- 4 cups smoked Gouda, grated
- 3 cups Muenster cheese, grated and divided
- 1-1/2 tsp salt
- 1/2 tsp pepper
- 1 lb penne, cooked and cooled

In a 3-qt. slow cooker, combine the first five ingredients
- 2 jars (23-1/2 ounces each) mixed tropical fruit, drained and chopped
- 3/4 cup thawed limeade concentrate
- 1/4 cup sweet chili sauce
- 1 garlic clove, minced
- 1 teaspoon minced fresh gingerroot
- 4 bone-in pork loin chops (3/4 inch thick and 5 ounces each)
- 1 green onion, finely chopped
- 2 tablespoons minced fresh cilantro
- 2 tablespoons minced fresh mint
- 2 tablespoons slivered almonds, toasted
- 2 tablespoons finely chopped crystallized ginger, optional
- 1/2 teaspoon grated lime peel

- 1-1/2 cup sweetened coconut, shredded
