Champagne and Black Olive Vinaigrette

- 1/4 cup Champagne vinegar
- 2/3 cup extra-virgin olive oil
- 2 to 3 tablespoons black olive puree

- Candied Walnuts:

- 1/2 cup shelled walnut pieces
- 2 cups peanut oil
- 1 cup confectioners’ sugar
- Balsamic Dijon Vinaigrette:
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon minced shallot
- 1 teaspoon minced fresh thyme leaves
- 1/3 cup extra-virgin olive oil
- 1/4 cup hazelnut oil
- 1/4 cup walnut oil
- Salt
- Freshly ground black pepper
- Salad:
- 3 heads Belgian endive
- 1 head baby frisée (curly endive)
- 1/2 pound baby arugula leaves
- 1/2 pound mixed baby greens
- 2 Granny Smith apples
- 1 pomegranate
- 6 whole pitted dates, cut into strips

- 1-1/2 cups mayonnaise
- 2 Tbsp minced shallot
- Zest of 1 orange
- 1 Tbsp orange juice
- 1 Tbsp lemon juice

- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp hot pepper sauce
- Shrimp:
- 2 lbs (21–25) peeled and deveined shrimp
- 1 tsp ground coriander
- 1/4 tsp ground white pepper
- 1-1/2 cups white wine
- 1 cup water
- 2 bay leaves
- 1 tsp minced garlic
- 1/2 tsp mustard seed
- Few orange slices, cut in fourths
