Harvest Apple Cake with Cream Cheese Frosting

Preheat the oven to 350°F
- Frosting:
- 2 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tsp vanilla
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 4 cups grated apples, peeled
- 1/2 –1 cup nuts
- 1 (8-oz.) package of cream cheese, softened at room temperature

Fudgy Salted Caramel Brownies

Serves 12–15
- 2 Tbsp unsweetened cocoa powder
- 3/4 cup all-purpose flour
- 1/2 tsp + 1/8 tsp sea salt, divided
- 1 tsp baking powder
- 2 sticks unsalted butter
- 6 oz semisweet chocolate chips
- 4 oz extra bittersweet chocolate (70% cacao), chopped
- 1 Tbsp instant espresso coffee granules
- 1 cup white sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup caramel sauce

- Store bought, cook as directed or use your own recipe, cool
- Lemon Filling:
- 1 1/4 1 1/4 1/4 cups sugar, divided
- 6 6 6 tbls. Cornstarch
- 1/2 1/2 1/2 tsp. salt
- 1 1/4 1 1/4 1/4 c. Water
- 2 2 2 tbls. Butter (melted)
- 2 2 2 tsp. grated lemon peel
- 4-5 4-5 4-5 drops yellow food coloring (if desired)
- 1/2 1/2 1/2 c lemon juice
- Cream cheese Filling:
- 2 2 2 pkgs. (8oz) cream cheese softened
- 3/4 3/4 3/4 c confectioners sugar
- 1 1/2 1 1/2 1/2 c whipped topping
- 1 1 1 tbl. Lemon juice
- prepare lemon filling:
- Cream cheese filling:
- 1/2 cream cheese and sugar in large bowl until smooth. Fold in whipped topping and lemon juice. Refrigerate 1/2 c. for garnish. Spread remaining cream cheese mixture into pie shell. Top with Lemon filling. Refrigerate overnight.
- to reserved cream cheese mixture with pastry bag to decorate. You can also use your own whipped cream recipe.
- Store in refrigerator.
Flank Steak with Cilantro & Blue Cheese Butter Recipe

In a large resealable plastic bag, combine the first five ingredients
- BLUE CHEESE BUTTER:
- 1/2 cup canola oil
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1 tablespoon reduced-sodium soy sauce
- 1/2 teaspoon paprika
- 1 beef flank steak (2 pounds)
- 3/4 cup crumbled blue cheese
- 3 tablespoons butter, softened
- 1 green onion, finely chopped
- 1 tablespoon minced fresh cilantro
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
BACON SPINACH DIP

Preheat oven to 400° 1
- 1 pound bacon
- 4 cups baby spinach, chopped
- 16 ounces cream cheese, soft
- 2 cups sour cream
- 1/2 cup mayonnaise
- 1 Tablespoon Worcestershire sauce
- 3/4 cup shredded Parmesan
- 1 1/2 Tablespoons minced garlic
- 2 teaspoons Dijon mustard
- 1 small jalapeno pepper, seeded and diced
- 1 + 1/2 cups shredded mozzarella
- 1 + 1/2 cups shredded cheddar
- 2 Tablespoons fresh parsley, chopped
- Bread or crackers for serving

- Unsalted butter, for greasing the pan
- 1 12-ounce package semisweet chocolate chips
- 1 cup butterscotch chips
- 1 14-ounce can sweetened condensed milk (save the can)
- 1 teaspoon pure vanilla extract
- 1 8-ounce can walnuts, plus more for topping
- 1/2 cup raisins or dried currants (a couple of handfuls)
- Candied red and green cherries (optional)
MEATBALL CASSEROLE

Ladle a layer of pasta sauce on the bottom of an 11 x 7 pan
- Meatballs (I made my own with 1lb of hamburger but you could easily use frozen meatballs or make your own favorite recipe.)
- 2 cups pasta sauce (more or less depending on your taste. I make my own sauce because it is so easy but, the jar kind is good too.)
- 1 8oz ball of fresh mozzarella
- 1/2 cup of grated Parmesan
- Italian seasonings.
- 1/2 onion
- 3 cloves of garlic
- 1 tbsp of Italian seasonings
- 1 tsp fennel seed
- 2 28 oz cans of crushed tomatoes
- 1 15oz can tomato sauce
