Super-Simple Picnic Potato Salad

- 5 tsp curry powder
- 1 Tbsp fresh lime juice
- 1 tsp honey

- 1 small red onion, diced
- 1 green apple, diced

- 1/2 cup salted, roasted cashews, coarsely chopped

- 1 cup water
- 1 stick butter
- 1 cup flour
- 4 eggs
ROASTED GARLIC CHEESY MASHED POTATOES

- Ingredients:
- 1 head garlic
- Couple tsp olive oil
- 2.5 lbs Yukon gold potatoes, peeled and quartered
- 2 –3 Tbsp, plus more to taste, salt
- 6 Tbsp butter, cut into pieces
- 2/3 cup buttermilk
- 8 oz fontina cheese, shredded
