Scrap Salad

Grate the carrots, apples and broccoli stems into a medium bowl
- 3 carrots, peeled
- 2 apples
- 2 broccoli stems
- 1/2 cup raisins
- 2 stalks celery, thinly sliced
- 1/4 cup apple cider vinegar
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- Pinch kosher salt
- Freshly ground black pepper
Fruit Salad Parfait

Makes 5 servings
- 1-1/2 cups chopped mango
- 1-1/2 cups chopped papaya
- 1 cup chopped seedless green grapes
- 2 bananas, peeled and chopped
- 1 granny smith apple, cored and chopped
- 1/2 cup orange juice
- 2-1/2 cups nonfat Greek yogurt
- 1 cup granola
Mexican Pot Pie with Biscuit Topping

Preheat oven to 350°F. In a 4-inch deep skillet or sauté pan, cook ground beef until brown and drain off fat
- Directions:
- 1-1/2 lbs. lean ground beef
- 1/2 cup chopped red onion
- 1/2 cup chopped green pepper
- 1.25 oz. package taco seasoning mix
- 3/4 cup water
- 16-oz. can kidney beans, un-drained
- 11-oz. can whole kernel corn with sweet peppers, drained (or 2 cups frozen corn with one diced roasted red pepper)
- 1 tube Pillsbury Grands Biscuits, or similar
- 3 cups shredded cheddar cheese (12 oz.)
- 1 Tbsp. cilantro or parsley, to garnish
Lemony Thyme Chicken Breasts

Preparation: Serves 4 Combine first 5 ingredients (through honey) in a large zip-top plastic bag
- 1/2 tsp lemon zest
- 1 1/2 cups lemon juice
- 1/4 cup chopped fresh thyme leaves
- 1 Tbsp olive oil
- 2 1/2 Tbsp honey
- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp pepper
PIG IN A PITA

Serves 5
- Ingredients:
- 5 bacon slices
- 5 jumbo hot dogs
- 1 (11-oz) can pork and beans
- 1 Tbsp yellow mustard
- 1 Tbsp ketchup
- 5 pocket-less pita
- 1-2/3 cups yellow cheddar cheese, shredded
- 3/4 cup red onion, small dice
- 1-1/4 cups sliced pepperoncini
- 10 kosher dill pickle sandwich slices
BROCCOLI

Follow the ingredient instructions
- Preheat oven to 375°
- Chop a head of broccoli (do not rinse immediately prior to preparing!)
- Mince 2-3 cloves of garlic
- Put broccoli, garlic, 2 tbsp. olive oil, and a few shakes of salt and pepper in a ziploc bag.
- Shake it up (my daughter loves to do this part)
- Spread out on baking sheet, place on top rack, and bake for about 30 minutes.
- Broccoli will be crunchy and delicious! I make this at least 3 times a week and have to control myself once I take it out of the oven, I could eat this alone for dinner! -
Noodle Kugel

- 1large onion, chopped
- 1tablespoon plus 1/4 teaspoon sugar

WIENERS AND SAUERKRAUT

WIENERS AND SAUERKRAUT INGREDIENTS: DIRECTIONS: 1
- 3 German wieners, about 2 oz. each (they are usually attached by the casing in pairs)
- 1/2 medium onion, thinly sliced
- 1 (14-oz.) can of sauerkraut, rinsed, drained
- 1 tsp. Caraway seed
- 1/4 cup lager (or favorite beer, or use chicken stock)
- Hot dog or other favorite rolls
Chicken and Sausage Gumbo

- 2 lbs. boneless skinless chicken thighs, chopped
- 1/2 Tbsp. Creole seasoning
- 1 lb. Andouille sausage, chopped
- 1 cup flour
- 2 cups onion, finely chopped
- 2 cloves garlic, minced
- 1 cup celery, chopped
- 1 green bell pepper, chopped
- 1 (14.5-oz.) can petite diced tomatoes
- 1 cup uncooked long grain rice
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 3 bay leaves
- 1/4 tsp. dried thyme
- 1 package (1 lb., 4 oz.) frozen sliced okra
- 9 cups chicken broth
Chicken Parmesan Casserole

1 Heat oven to 375°F. In 12x8-inch (2-quart) ceramic or glass baking dish, arrange chicken
- 4 boneless skinless chicken breasts, cut into 1-inch pieces
- 1 3/4 cups marinara sauce
- 3 tablespoons chopped fresh basil
- 1 1/2 cups shredded mozzarella cheese (6 oz)
- 6 tablespoons butter, melted
- 1 teaspoon Italian seasoning
- 1 can (8 oz) Pillsbury® refrigerated garlic breadsticks
- 1/2 cup grated Parmesan cheese
