Ozark pudding cake

1) heat oven to 350; grease an 8" cast iron skillet
- 1/2 t unsalted butter
- 2/3 c flour
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 2 large eggs
- 1 c sugar
- 1 tsp finely grated ginger
- 1 tsp vanilla extract
- 1 granny smith peeled and cored
- 1 60z package blackberries, halved
- 1/2 c chopped pecans
- whipped cream
Chocolate chip bread pudding

In a medium bowl, add Eggs, Milk/Whey, Sugar and Vanilla Extract and Whisk until foamy
- 3 oz Hokkaido Bread (or Challah)
- 1 large Egg
- 1/4 cup Yogurt Whey (or Milk)
- 1/4 cup Milk (or Whey)
- 1/4 tsp Pure Vanilla Extract
- 1 TBL Butter
- 1/4 tsp Instant Espresso Powder
- 1/3 cup Semi Sweet Chocolate Chips
- 3 TBL Sugar
- For Pressure Cooker
- 1 cup Water
- 1 Stainless Steel Long Legged Trivet
- 2 6 oz Ramekins
Nutella Pan di Stelle No-Bake Tart

In a food processor, process crumbs till fine
- Crust:
- 12 Oz Pan di Stelle (or any chocolate cookies) plus a few extra to decorate
- 1 Stick Butter (melted and cooled about 5 minutes)
- Filling:
- 1 13 Oz Jar Nutella
- 2 Cups Mascarpone Cheese (softened)
Apple butter

Peel, core and slice each apple into 8 slices
- 6 sweet apples
- 1/4 cup apple cider or pure apple juice
- 1/2 cup packed light brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 cinnamon stick
- 1 teaspoon pure vanilla extract
Mini pineapple upside down cakes

- Topping:
- 1 can pineapple rings
- 6 maraschino cherries
- 1/2 stick of butter (4 Tbsp)
- 2/3 cup brown sugar (packed)
- Cake:
- 2 eggs
- 2/3 cup sugar
- 4 Tbsp pineapple juice
- 2/3 cup all purpose flour
- 1 tsp baking powder
- Pinch of salt

Preheat oven to 350° and grease two 12-cup muffin with cooking spray
- Cooking spray, for pan
- 1 16.5-oz. tube sugar cookie dough
- 1/2 c. cinnamon sugar
- 6 oz. cream cheese, softened
- 1/4 c. sugar
- 1/2 tsp. vanilla
- pinch of salt
- 6 oz. cool whip

Blueberry Lemon Pudding Cake

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius)
- 1 box lemon cake mix
- Ingredients called for by cake mix (oil, eggs, water, etc.)
- 12 ounces fresh blueberries, rinsed
- 2 tablespoons granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon water
- 1 – 3.4-ounce box instant vanilla pudding
- 2 cups whole milk
- 1 – 8-ounce package cream cheese, room temperature
- 1 cup heavy cream
- 1 cup powdered sugar
Lemon Blueberry Mascarpone Ciambella

Preheat the oven to 350 degrees
- Glaze:
- 2 3/4 Cups All Purpose or 00 flour
- 1/4 Cup cornstarch
- 1 Tablespoon baking powder
- 1/2 Teaspoon salt
- 8 oz mascarpone cheese, room temperature
- Zest of 4 lemons, juice of 2
- 1 1/2 Cups granulated sugar
- 2 packets Italian vanilla powder or 1 Teaspoon vanilla extract
- 3 large eggs, room temperature
- 1/2 Cup whole milk
- 1 Cup fresh blueberries
- 1 Cup confectioners sugar
- 2 Tablespoons fresh lemon juice (you can use more or less to make the glaze as thin or as thick as you like)
- 1/4 Teaspoon vanilla extract
- Zest of 1 lemon (optional)
Pumpkin chili

Set your 6-quart Instant Pot to the saute function and add olive oil, onion, bell pepper, and jalapeño
- Pumpkin Chili Seasonings:
- 2 Tbsp. olive oil
- 1 cup sweet onion finely diced
- 1 cup green bell pepper finely diced
- 1 jalapeno seeded, finely diced
- 2 cloves garlic crushed
- 3 cups chicken broth regular
- 1 ½ pounds chicken breasts
- 15 ounces pumpkin puree canned
- 2 Tbsp. tomato paste
- 15 ounces canned black beans rinsed and drained
- 2 tsp. chili powder
- 1 tsp. cumin
- ½ tsp. paprika
- ¼ tsp. ground sage
- 1 ½ tsp. salt to taste
- ¼ tsp. pepper to taste
- Pinch cayenne pepper
- Pinch cinnamon
- Toppings:
- Green Onions optional
- Cilantro optional
