Ingredients

    t unsalted butter

  • c flour

  • ½

    tsp baking powder

  • ¼

    tsp kosher salt

  • 2

    large eggs

  • 1

    c sugar

  • 1

    tsp finely grated ginger

  • 1

    tsp vanilla extract

  • 1

    granny smith peeled and cored

  • 1

    60z package blackberries, halved

  • ½

    c chopped pecans

  • whipped cream

Directions

1) heat oven to 350; grease an 8" cast iron skillet. in small bowl , whisk together flour, baking powder and salt. 2) in large bowl, beat eggs and all but 1 tsp of the sugar until pale and thick. whisk in ginger and vanilla, then the flour mixture. 3) chop half the apple and fold into batter along with half the blackberries and half the pecans. transfer to prepared skillet. 4) thinly slice remaining apple and arrange on top of batter. brush the apple with melted butter and top with remaining sugar. top with remaining blackberries and pecans. 5) bake until top is golden brown, 40-45 minutes. serve with whipped cream
