- 1 tablespoon tomato paste
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 bay leaf
- 2 1/2 cups beef broth
- 3/4 cup red wine
- 1 pound fresh or dried tagliatelle

- – 1/3 cup quinoa, rinsed in cold water
- – 2/3 cup water
- – 16 whole (pitted) dates
- – 1/2 cup raw skin-on almonds
- – 1/3 cup smooth almond butter (or, if preferred, peanut butter)
- – 1/3 cup dark chocolate chips
- – Pinch of salt

- 2 tablespoons grated parmesan cheese

Veal saltimboca with lemon

Corn casserole

Drain your can of kernel corn
- 2 eggs
- 1 c cheddar cheese shredded
- 1 box Jiffy corn muffin mix
- 1 can chopped chiles (use any heat you like - mild doesn't make it spicy, just gives flavor)
- 1 can corn drained
- 1 cup cream corn
- 1/2 stick butter melted
- 1/4 tsp salt optional
- 3/4 c sour cream light is fine
- 1/2 c onion diced, optional
