For the couscous: In a medium saucepan, bring the chicken broth and salt to a boil over medium-high heat

- 2 cups low-sodium chicken broth
- 1/2 teaspoon kosher salt
- 1 (10-ounce) box (1 1/4 cups) couscous (recommended: Near East)
- 1/4 cup extra-virgin olive oil
- 2 cloves garlic, peeled and crushed
- 4 ounces ricotta salata cheese, cut into 1/2-inch pieces
- 1 small or 1/2 large cucumber, peeled, seeded, and cut into 1/2-inch pieces
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan
- 1/4 cup chopped fresh basil leaves
- Dressing:
- 1/4 cup extra-virgin olive oil
- Zest and juice from 1/2 large lemon
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Slow Cooker Raspberry Coconut Cake

Grease the inside of a 6 quart slow cooker with coconut oil spray or similar
- 2 cups almond flour
- 1 cup unsweetened shredded coconut
- 3/4 to 1 cup Swerve Sweetener (depending on how sweet you like it)
- 1/4 cup powdered egg whites
- 2 tsp baking soda
- 1/4 tsp salt
- 4 large eggs
- 1/2 cup melted coconut oil
- 3/4 cup almond or coconut milk
- 1 tsp coconut extract
- 1 cup raspberries, fresh or frozen
- 1/3 cup sugar-free dark chocolate chips (optional but oh so good!)
Teriyaki chicken

- 1/2 c water
- 1 tsp ginger
- 1 tsp crushed red pepper
- 1/2 c brown sugar
- 1 tsp minced garlic
Dill pickle dip

Take the cream cheese and let it soften at room temperature for an hour
- 32 oz Jar of dill pickles, diced (make sure you use dill pickles and get the kind that are refrigerated in the supermarket – we used Claussen and used all but two of the pickles in the jar)
- 1/3 cup of the pickle juice reserved from the jar
- 1/2 cup of a red onion, diced
- Two 8 oz bricks of cream cheese
- 1 tbsp of crushed garlic
- 2 tsp of black pepper
- 2 tsp of Old Bay seasoning
- Pretzel chips, for dipping (or any chips, but I like these best and, yes, they have them at Costco!)
