Soy maple salmon

Preheat the oven to 400 degrees F
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon fresh orange juice
- 3 cloves garlic, smashed
- 4 5-ounce skinless center-cut salmon fillets (preferably wild)
- 4 cups cauliflower florets (from 1 small head)
- 1/4 cup fat-free low-sodium chicken broth (or use water)

- 1 Tablespoon olive oil
- 3 lbs boneless skinless chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper
- 2 cloves garlic crushed or finely minced
- 3/4 cup balsamic vinegar
- 2 cups cherry or grape tomatoes left whole
- 1/4 cup basil leaves cut into chiffonade (fine ribbons)
- Homemade or store-bought balsamic reduction if desired.

- 1 tsp coriander powder (or cumin - I interchange)
