GF Black Forest Cupcakes

Preheat oven to 350 degrees
- 1/2 cup unsalted butter at room temperature
- 1 1/2 cups granulated sugar
- 2 large eggs at room temperature
- 1 teaspoon pure vanilla extract
- 1 2/3 cups gluten-free flour
- 2/3 cup unsweetened cocoa
- 2 teaspoons baking powder
- 1 teaspoon kosher or fine sea salt

- 2 cups graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)
- 2 cups confectioners’ sugar (aka powdered sugar)
- 1 cup + 4 tablespoons peanut butter

Slow Cook Peach Cobbler

1 Spray 6-quart slow cooker with cooking spray
- 4 cups fresh or frozen sliced peeled peaches
- 1/4 cup sugar
- 1 cup Original Bisquick® mix
- 1/2 cup sugar
- 1 cup milk

Mini Corn Dogs ( Pamela's)

In a 12-inch skillet heat approximately 2-inches of oil to 375°
- Make 1/2 of this recipe for 10 hot dogs/20 corn dogs.
- 1 pack uncured, nitrate-free 100% beef hot dogs
- 2 cups Pamela's Gluten-Free Bread Mix (no yeast needed in this recipe)
- 1 cup yellow cornmeal
- 1 tsp sea salt
- 2 eggs slightly beaten
- 2 cups warm water

In a large skillet, heat the oil over medium heat until hot but not smoking
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 1/2 cups long grain white rice
- 2 tablespoons ground cumin
- 2 1/2 cups chicken broth
- 1 14-ounce can tomato sauce
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon ground black pepper, or to taste
- 1 15-ounce can peas and carrots, drained (optional)
Chocolate Glazed Cherry Almond Paleo Quick Bread

Preheat your oven to 325°F
- 3 cups (336 g) blanched almond flour (I recommend only using Honeyville or nuts.com brand)
- 3 tablespoons (24 g) coconut flour
- 7 tablespoons (63 g) tapioca starch/flour (I recommend only using Authentic Foods or nuts.com brand)
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons Paleo baking powder*
- 3/4 cup (120 g) coconut palm sugar, processed into a fine powder
- 1/2 teaspoon kosher salt
- 3 ounces tart dried cherries, roughly chopped
- 5 tablespoons (70 g) virgin coconut oil, melted and cooled
- 1/3 cup (2.6 fluid ounces) unsweetened almond or coconut milk
- 3 eggs (180 g, out of shell) at room temperature, beaten
- 2 teaspoons pure almond extract (optional)
- 3 ounces dark chocolate, chopped
- To make your own Paleo baking powder, combine 1 part baking soda + 2 parts cream of tartar + 1/2 part arrowroot or tapioca starch/flour.
Bobotie (South African Meatloaf)

Heat the butter in a saucepan
- 1 lb minced beef
- 2 tbsps butter
- 1 large, white onion, finely chopped
- 1 tbsp curry powder
- 1 tsp turmeric
- 3 cloves garlic, minced
- zest and juice of 1/2 lemon
- 1/2 cup ground almonds (or almond flour)
- 1 granny smith (or other tart, green) apple, cored, peeled and diced
- 1/4 cup raisins
- 5 large eggs
