Spicy Avocado Dressing

To make the dressing, place all of the ingredients into a blender and blend until smooth and creamy
- 2 small avocados
- 3/4 cup water
- 1/4 cup freshly squeezed lime juice
- 1 jalapeno pepper, stem removed
- 1 clove garlic, peeled
- handful fresh cilantro
- 1/2 teaspoon sea salt
Slow Cooker Coconut Chicken Curry

Preparation Instructions 1
- 2 pounds, 3-1/3 ounces, weight Boneless Skinless Chicken Breast, Cut Into Large Cubes
- 1 whole Onion, Peeled And Halved
- 2 cloves Garlic, Peeled
- 1 whole Small Green Bell Pepper, Seeded And Quartered
- 1 can (156ml Can) Tomato Paste
- 1 can (about 400ml Can) Coconut Milk
- 1-1/2 teaspoon Salt
- 1 Tablespoon Curry Powder
- 1 Tablespoon Garam Masala (Indian Spice Mix)
- 2 whole Dry Red Chili Peppers (optional For Extra Heat))
- 2 Tablespoons Water
- 1-1/2 Tablespoon Cornstarch
- 1 bunch Coriander (optional, For Decoration)

- 1 can diced tomatoes
- 1 medium white onion
- 3 medium jalapenos (I only used 1 in the hopes that my kids would eat it)
- 2 c long grain white rice (not instant!), uncooked
- 1/3 c canola oil
- 4 minced garlic cloves
- 2 c chicken broth
- 1 T tomato paste
- 1 1/2 t salt
- 1/2 c fresh cilantro

Key Lime Bars

Directions Make crust: Preheat oven to 350 degrees
- 1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
- 1/3 cup sugar
- 5 tablespoons unsalted butter, melted

- 2/3 cup fresh Key lime juice (about 23 Key limes total)
- 1 can sweetened condensed milk (14 ounces)

1. Line a baking sheet with aluminum foil
- 1 large egg
- 2 1/2 tablespoons mayonnaise (I like Hellman’s Real)
- 1 1/2 teaspoons Dijon mustard (I like Maille brand)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 cup finely diced celery (you’ll need one stalk)
- 2 tablespoons finely chopped fresh parsley
- 1 pound lump crab meat*
- 1/2 cup panko (I like the Whole Foods 365 brand for this recipe)

Honey Bourbon Crock Pot Chicken

- 1/2 cup low sodium soy sauce
