Slow Cooker Enchilada

In a large skillet, cook the beef, onion and green pepper until beef is browned and vegetables are tender; drain
- 1 pound ground turkey or beef
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1 can (16 ounces) pinto or kidney beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1/3 cup water
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup (4 ounces) shredded sharp cheddar cheese
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 6 flour tortillas (6 inches)
Jules Crescent Rolls

In a large bowl, mix warm water, sugar, and yeast and let stand for 5 minutes
- 1/3 cup warm water
- 1 teaspoon granulated cane sugar (Wholesome Sweeteners®)
- 2 1/4 teaspoons (1 packet) rapid rise yeast (Hodgson Mill® Fast-Rise Yeast)
- 1 1/3 cups plus 2 tablespoons Jules Gluten Free™ All-Purpose Flour
- 1/2 teaspoon salt
- 2 tablespoons honey or light agave nectar (Madhava Light Agave Nectar)
- 1 egg
- Melted butter or non-dairy alternative to brush onto rolls (Earth Balance® Buttery Sticks)

Baked Spaghetti & Meatballs

In large cast iron skillet, sauté onions in olive oil over med/low heat
- Meatballs (I used about 1 1/2 doz homemade meatballs) **Meatballs were fully cooked
- 24 oz jar marinara sauce (I used San Marzano Sauce)
- 1/2 yellow onion (diced)
- 3 cloves garlic (crushed)
- 1 tsp Italian seasoning
- 2 TBSP olive oil
- 3/4 # spaghetti noodles
- 1-2 cups grated cheese (I used half colby-jack, half mozzarella)
- 1/2 cup grated parmesan
Pumpkin Spice Latte

In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming
- 2 cups milk
- 2 tablespoons canned pumpkin OR 1 teaspoon of Torani Pumpkin Spice Syrup (your choice)
- 2 tablespoons sugar or sugar substitute - you can halve this amount
- 2 tablespoons vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)
Angel Food Cake

Preheat oven to 350°. Sift together powdered sugar, flour and salt
- 1 cup Pamela's Artisan Flour Blend
- 3/4 cup powdered sugar
- 1 tsp salt
- 1-3/4 cup fresh egg whites- room temp. (approximately 18 large eggs)
- 1/4 cup warm water
- 1-1/2 tsp cream of Tartar
- 1 tsp vanilla
- Optional: 1/4 tsp. orange essence or extract or almond extract
- 3/4 cup + 2 TBSP granulated sugar

Knead flour, salt, oil and water into a medium-firm dough
- For the dough:
- 10-1/2 oz. bread flour
- l/6 oz. salt
- 1 -l/2 oz. vegetable oil
- 5-1/3 oz. water, lukewarm
- For the filling:
- 4-1/2 lb. apples (Golden Delicious), sliced
- 5 -l/3 oz. granulated sugar
- 1-1/2 oz. dark rum (Myers)
- 5-1/3 oz. raisins
- 1/8 tsp. ground cinnamon
- 2 lemons (juice and peel)
- For the buttered breadcrumbs:
- 10-1/2 oz. butter (unsalted)
- 10-1/2 oz. bread crumbs
Spaghetti with Walnut Sauce

Place the walnuts, oil, salt, pepper, and nutmeg in a blender and blend well
- 400 g (14 oz.) Schär Spaghetti
- 100 g (3 1/2 oz.) shelled walnuts
- 30 g (1 oz.) Schär Bread crumbs
- freshly grated nutmeg to taste
- white pepper and salt to taste
- 30 ml (3 tablespoons) olive oil
- a knob of butter
- 1 tablespoon grated Parmesan cheese.
Unstuffed Cabbage Rolls

- 1 tbsp olive oil
- ground beef
- chopped onion
- chopped cabbage
- 1 garlic clove
- sea salt
- pepper
- 28 oz can diced tomatoes
- 16 oz can tomato sauce
- 1/2 cup water
