If the chicken breasts are large, cut them in half
- 1 1/2 pounds boneless skinless chicken breasts
- 1 egg, lightly beaten
- 1 cup tortilla crumbs, or gluten free bread crumbs
- 28 ounces pasta sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded parmesan cheese
Qdoba Slow Cooked Pork

1. Cut onions into fine strips
- 1 boneless pork shoulder roast
- 2 white onion- cut into thin strips
- 2 poblano chiles- cut into thin strips
- 2 jalapeno chiles- minced
- 2 Anaheim green chiles- cut into thin strips
- 2 cups of tomatillos- cut into large chunks
- 3 cloves of fresh garlic
- 1 Tbsp. of salt
- 1/2 tsp. of garlic powder
- 1/2 tsp. of black pepper

- 2/3 cup arrowroot starch

- 1 1/2 pounds boneless, skinless chicken breast
- 3/4 cup coconut milk
- 3 teaspoons fish sauce – use divided
- 2 limes – use divided
- 1/2 cup panko style gluten-free bread crumbs
- 1 1/2 cups flaked coconut
- 1/2 teaspoon kosher or fine sea salt
- 1/4 teaspoon black pepper
- 1/3 cup creamy Sunbutter
- 3 tablespoons honey
- 1 – 4 teaspoons Sambal Oelek (or other chili paste), depending on the heat level you like – 3 teaspoons is perfect for us
- 1 small garlic clove, finely grated on a microplane grater or pressed through a garlic press
- 1 – 1 inch piece of fresh ginger, finely grated
- 1/2 teaspoon sesame oil
- Water
- Olive oil
