Pre-heat oven to 350º F (static) or 325º F (convection)

- 1/2 cup butter or non-dairy alternative (e.g. Earth Balance® Buttery Sticks)

- 2 tablespoons vegetable oil
- 4 tablespoons (1/2 stick) unsalted butter
- 1/3 cup Frank's Red Hot sauce or any other favorite hot sauce
- 1 pound ground chicken, preferably thigh meat
- 1 large egg
- 1/2 celery stalk, minced
- 3/4 cup breadcrumbs
- 1 teaspoon salt
- Blue Cheese Dressing
- 3/4 cup sour cream
- 1/3 cup crumbled blue cheese
- 1/3 cup whole milk
- 1/3 cup mayonnaise
- 1 teaspoon salt or more to taste

Mom's Baked Beans

This is a good time to clean out bottles of relish, sauces you have in the fridge, dribs and drabs
- 1 lb navy beans. Soak overnight in cold water. Be sure you have enough so they are not dry by morning.
- Cook the beans in that water until they are tender but not mushy. They should be soft enough to chew. They will not get any softer as they bake. Do not drain this water off.
- You will have to adjust to taste but I think I would use this amount for 1 lb.
- 1/2 cup molasses
- 1/2 cup brown sugar or maple syrup
- 1/2 cup catsup
- 1/2 cup red tomato relish or salsa

- 1/2 loaf French bread
- 1 clove garlic
- 2 Tablespoons olive oil
- 2 tomatoes, medium chopped
- 2 avocados, medium chopped
- 1/3 cup finely chopped onion
- 1/4 cup chopped cilantro
- 2 Tablespoons freshly squeezed lime juice
- 1/2 teaspoon salt

Gluten-Free Stir-Fry

First I want to start off by saying how much I love stir-fry
- 1 piece sirloin steak
- 2 carrots
- 1 broccoli crown
- 1 can water chestnuts
- 1/2 pkg Thai rice noodles
- 2 tbsp. olive oil
- 2 tbsp. organic gluten-free tamari soy sauce (My personal favorite is Wan Ja Shan Organic Gluten-Free Tamari Soy Sauce)
- Optional: 1-2 tbsp. Thai Kitchen Gluten-Free Spicy Thai Chili Sauce
