Garlicky Baked Butternut Squash

1. In a large bowl, combine the parsley, oil, garlic, salt and pepper
- 2 tablespoons minced fresh parsley
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
- 1/4-1/3 cup vegan parmesan cheeze OR grated Parmesan cheese*
Cookie Dough Billionaire Bars

Preheat oven to 350 degrees F
- For Shortbread:
- 2 cups (1 lb or 4 sticks) butter, softened
- 1 cup sugar
- 1/4 cup light brown sugar, packed
- 3 3/4 cup all-purpose flour
- 1/2 teaspoon salt
- For Caramel:
- 2 cups sugar
- 12 tablespoons butter
- 1 cup heavy cream
- 1 tbsp fleur de sel or fine sea salt
- For Cookie Dough:
- 1 cup (2 sticks) butter, softened
- 1/2 cup sugar
- 1 cup light brown sugar, packed
- 2 tablespoons heavy cream
- 1 tablespoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup mini semisweet chocolate chips
- For Chocolate Ganache:
- 1 1/2 cups dark chocolate chips
- 1 cup heavy cream
- 1 tablespoon vanilla extract
Wild Rice

Boil wild rice in 6 cups of water for 45 minutes
- 2 cups uncooked wild rice
- 8 oz mushrooms
- Half cup of mayo
- Chopped onion and celery
- 1 can of mushroom soup
- 2 cups grated cheese
Costco Muffins

. Mix all ingredients together
- 1 (18 ounce) box cake mix, package (Duncan Hines is the best)
- 2 tablespoons flour
- 3 eggs
- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon baking powder
Bacon Mushroom Smothered Chicken with Tangy Honey Mustard Sauce | Primally Inspired

Whisk all the marinade ingredients together in a small bowl
- Tangy Honey Mustard Marinade:
- 4-6 chicken breasts
- 1 onion, cut in half and sliced
- 8 oz mushrooms, sliced
- 1/2 lb bacon or pancetta, diced
- salt and pepper, to taste
- 3 tablespoons all natural dijon mustard
- 2 tablespoons balsamic vinegar
- 2 tablespoons mayonnaise
- 1 1/2 teaspoon pure raw honey (leave out for a sweetener free version)
- 1 teaspoon garlic, minced
Guacamole Chipotle Style

Combine all of the ingredients into a bowl, and mash together until smooth
- 2 Hass avocados
- 1/2 jalapeño, seeded, and minced
- 1/4 red onion, finely chopped
- 2 heaping tablespoons cilantro, finely chopped
- 1/4 lime, juiced
- 1/4 teaspoon salt (I like sea or kosher)
Avocado Strawberry Spinach Salad with Poppy Seed Dressing

Toss all ingredients together with your desired amount of dressing until combined
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 1 avocado, diced (or you can double this to 2 avocados!)
- 4 ounces crumbled gorgonzola or blue cheese
- 1/4 cup sliced almonds, toasted
- half a small red onion, thinly sliced
- Poppyseed Dressing
- 1/2 cup avocado oil (or any oil, such as olive oil)
- 3 Tablespoons apple cider vinegar
- 2 Tbsp. honey
- 1 Tbsp. poppy seeds
- pinch of ground dry mustard (optional)
- salt and pepper
German Curry Sauce

Combine all and heat on stove, its super easy
- 2 teaspoon curry powder
- 1 1/4 C. chicken broth
- 1/2 C milk ( I will use half and half next time)
- Salt and Pepper to taste
Coconut Curry Chicken (Sharon's)

Heat oil and add curry powder cook for one minute add onion cook for 2 minutes
- 2 lbs cubed chicken breasts
- 1 1/2 tbsp coconut oil
- 2 tbsp curry powder
- 1/2 chopped yellow onion
- 1 tsp salt and pepper
- 1 can diced tomatoes
- 1 small can tomato sauce
- 1 can coconut milk
- 3 tbsp sugar
Crockpot Baked Chicken

Wash chicken and remove giblets from inside; dry and sprinkle lightly with salt and pepper
- 1 whole broiler-fryer chicken (about 3 1/2 lbs)
- 1 teaspoon vegetable oil
- 3 medium carrots, sliced
- 2 ribs celery, sliced in 1-inch pieces
- 4 green onions, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 2 cups chicken broth
- 1 cup dry white wine, or more chicken broth
- Salt and pepper to taste
