Potato Salad

•Add potatoes to large pot then cover with 1 1/2 inches of water
- 2 pounds small yellow, red or white potatoes
- 1 tablespoon apple cider vinegar (substitute: white wine vinegar or white vinegar)
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon yellow mustard (substitute Dijon or whole grain mustard)
- 1/2 cup finely chopped red onion (1 medium)
- 1/2 cup finely chopped celery (3 ribs)
- 1/3 cup finely chopped dill pickles
- 2 hard-boiled eggs, peeled and chopped, optional
- 1/4 cup chopped fresh herbs (see note above)
- Salt and freshly ground black pepper, to taste
Green Bean Casserole

Preheat oven to 350. Mix soup, milk, soy sauce, pepper, beans, and 2/3 cup of onions in a casserole dish
- 1 Can Cream of Mushroom Condensed Soup
- 1/2 Cup Milk
- 1 tsp Soy Sauce
- Dash of Pepper
- 4 Cups Cooked and Cut Green Beans
- 1 1/3 Cup of French Fried Onions
Banana Raspberry Bread

Heat oven to 350°F. Coat an 8" loaf pan with cooking spray
- Vegetable-oil cooking spray
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 large ripe or overripe bananas, mashed
- 1/4 cup skim milk
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup fresh or frozen raspberries
Chocolate Zucchini Bread

1.In a mixing bowl, beat eggs, oil, sugar and vanilla
- 3 egg
- 1 cup vegetable oil
- 2 cup sugar
- 1 tbsp vanilla extract
- 2 cup zucchini, peeled, shredded (about 1 medium)
- 2 1⁄2 cup all-purpose flour
- 1 ⁄2 cup baking cocoa
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 ⁄4 tsp baking powder
- Chocolate chips if desired
Watermelon Feta Salad

Get out a large bowl. Cut your watermelon in bite size pieces
- 1/2 a large Watermelon
- 1/2 cup Red Onion, sliced
- 1 tbsp Basil, chopped
- 1 tbsp Mint, chopped
- 3/4 cup Feta Cheese
- 1-2 tbsp Olive Oil
- 1-2 tbsp Balsamic reduction
