Chicken caesar pasta salad

Cook pasta according to package directions, drain, run cold water over it and drain again
- 2 stalks romaine lettuce
- 1 cup cooked chicken shredded or cubed
- 1/2 cup shredded Parmesan
- 1 cup uncooked rotini or favorite pasta (see blog post)
- 1 cup croutons
- 1 cup Caesar dressing
- black pepper
Air Fryer Hot Dogs

- 4 hot dog buns
- 4 hot dogs
- oil spray , for coating hot dogs
Slow Cooker Kielbasa & Pierogies

Combine three cups of chicken broth, frozen pierogies, cheddar cheese and kielbasa in a 4-6 quart crock pot
- 4 cups chicken broth divided
- Two 16 oz boxes pierogies
- 2 cups shredded cheddar cheese divided use
- 1 pound smoked Polska kielbasa
- salt & pepper to taste
- 1 8 oz block cream cheese softened to room temp.
Tzatziki Pasta Salad

1. Process first 7 ingredients in a food processor 30 seconds or until thoroughly blended
- 1 (16-oz.) container low-fat plain Greek yogurt
- 1/4 cup olive oil
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 3 garlic cloves
- 1 (16-oz.) package penne pasta
- 1 cup pitted kalamata olives, sliced
- 2 cucumbers, peeled, seeded, and diced
- 3/4 cup sun-dried tomatoes in oil, drained and chopped
- 1 (9.9-oz.) jar marinated artichoke hearts, drained and chopped
- 1 1/2 cups crumbled feta cheese
Chicken Breasts Stuffed with Goat Cheese and Sun-Dried Tomatoes

Combine boiling water and tomatoes in a bowl; cover and let stand 30 minutes or until soft
- 1 cup boiling water
- 1/3 cup sun-dried tomatoes, packed without oil
- 2 teaspoons olive oil, divided
- 1/2 cup chopped shallots, divided
- 1 1/2 teaspoons sugar
- 3 garlic cloves, minced
- 2 1/2 tablespoons balsamic vinegar, divided
- 1/2 cup (2 ounces) crumbled goat cheese
- 2 tablespoons chopped fresh basil
- 3/4 teaspoon salt, divided
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/8 teaspoon freshly ground black pepper
- 3/4 cup fat-free, less-sodium chicken broth
- 1/4 teaspoon dried thyme
- 2 teaspoons cornstarch
- 2 teaspoons water

Melt butter in a large skillet over medium-high heat
- 3 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 1 tablespoon corn starch
- 1-2 Basters full of chicken drippings
- 1 (10 1/2-ounce) can chicken broth, undiluted
- 1/2 cup milk
- 2 teaspoons dried minced onion
- 1/8 teaspoon pepper
Cuban Marinated Steak

Cumin, orange juice and lime juice flavor the marinade for this Cuban steak recipe
- 1/2 teaspoon cumin seeds
- 1/4 cup orange juice
- 2 tablespoons vegetable oil
- 2 tablespoons Montreal-style steak seasoning
- 2 1/4 teaspoons lime juice
- 1 1/2 teaspoons dried oregano
- 1 1/2 pounds beef rib-eye steaks
White Wine-Marinated Steak

1. Combine the first 3 ingredients in a shallow dish
- 3 tablespoons white wine
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 pound chuck eye steaks, trimmed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
- 1 large shallot, sliced
- 1/4 cup fat-free, lower-sodium beef broth
Skinny Poolside Dip

- 1 red pepper,
- 2 jalapeños (unseeded),
- 1 can of corn,
- 1/2 can diced olives,
- 16 oz fat-free cream cheese (softened),
- 1 packet Hidden Valley Ranch dip seasoning mix.
