Soft Cinnamon Cookies with Maple Pecan Frosting

Start by browning the butter
- Serves Makes 28-30 large cookies
- 1-1/2 cups salted butter (3 sticks)
- 1 cup white sugar
- 1-1/2 cups dark brown sugar
- 3 eggs
- 2 tablespoons Pure Vanilla Extract
- 4-3/4 cups all purpose flour, spooned and leveled
- 2 teaspoons baking soda
- 1 teaspoon salt
- 4 teaspoons cinnamon
- 1 batch Maple Pecan Frosting (below)
Grilled Corn and Bean Salad

Preheat a grill or a grill pan over medium heat
- 1/2 cup canola oil, divided
- 2 teaspoons ground cumin
- 1 tablespoon chili powder, divided
- Salt and freshly cracked black pepper

- SPICE MIX:
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- CUPCAKES:
- 1 1/2 cups (195 grams) all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 8 tablespoons (115 grams or 1 stick) unsalted butter at room temperature
- 1 cup (200 grams) lightly packed brown sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup packed canned pumpkin puree
- CREAM CHEESE FROSTING:
- 6 ounces (170 grams) cream cheese at room temperature
