- 8 mushrooms, quartered
- 6 spears asparagus, chopped
- Salt and freshly ground black pepper
- 12 large eggs
- 1/2 cup grated Monterey Jack
- 1/4 cup grated Parmesan
- 2 dashes hot sauce
- 2 tablespoons butter
- 1 medium onion, halved and sliced thin
- 1 cold baked potato, diced
- 1/4 cup green olives with pimentos, chopped
- 2 jars oasted red peppers, sliced thin
- 8 fresh basil leaves, chopped
Chocolate Lava Cakes (Pioneer Woman)

Preheat the oven to 425 degrees F
- Baking spray, for spraying custard cups
- 1 stick butter
- 2 ounces bittersweet chocolate
- 2 ounces semisweet chocolate
- 1 1/4 cups powdered sugar
- 2 whole eggs
- 3 egg yolks
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
- Vanilla ice cream, for serving
CREAMY LEMON CHICKEN PICCATA MEATBALLS

Place Meatball ingredients in a bowl and mix to combine
- SAUCE:
- 1 1 1 pound ground chicken
- 1 1 1 egg
- 3/4 3/4 3/4 cup breadcrumbs
- 2 2 2 garlic cloves , minced
- 1/4 1/4 1/4 cup chopped fresh parsley
- 1/2 1/2 1/2 cup grated parmesan cheese
- Salt and pepper
- 1 1 1 tbsp olive oil

- 1 1 1 tbsp all purpose flour
- 1 1 1 cup chicken broth
- 1 1 1 cup heavy cream

Chicken Thighs with Apples, Onions & White Cheddar Polenta

Preheat the oven to 375 degrees
- 8 slices smoked bacon
- 1 tablespoon EVOO
- 8 skinless, boneless chicken thighs
- Salt and pepper
- 3 tablespoons butter
- 3 liberty, braeburn or other crisp apples, thinly sliced
- 1 onion, halved and sliced
- 2 tablespoons chopped thyme
- 7 - 8 sage leaves, thinly sliced

- 1 pound Italian Sausage, casings removed
- 1 pound ground beef
- 1 large onion, chopped

- 1/2 teaspoon red pepper flakes
- 28 ounce can of diced tomatoes
- 16 ounces tomato sauce
- 2 bay leaves
- 8 cups chicken stock

- Parmigiano Reggiano rind
- 1 package tortellini or as many as you think your family can eat in one sitting
- 1/2 cup fresh chopped basil
