Soft Batch Chocolate Chip Cookies!

Preheat the oven to 350 and line a few trays with baking paper or spray with non-stick spray
- 14 14 14 tablespoons unsalted butter softened
- 1 1 1 cup granulated sugar
- 1/2 1/2 1/2 cup light brown sugar
- 2 2 2 eggs
- 1 1 1 teaspoon vanilla extract
- 2 1/2 2 1/2 2 cups all-purpose flour + a few extra tablespoons, see ** in directions below--I used 2 extra tablespoons
- 1 1 1 teaspoon baking soda
- 1/2 1/2 1/2 teaspoon salt or sea salt
- 3 3 3 cups chocolate chips ( any variation of chocolate chips or chocolate chunks)

- 3 tbsp. butter
- 2/3 cup sugar
- 1 egg, beaten
- 1/2 cup milk
- 1 1/2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 to 1 1/2 cups blueberries
Salisbury Steak with Mashed Potatoes and Parsnips and Cress

Preheat the oven to 425 degrees F
- 3 large starchy potatoes, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 1/2 cup milk or cream
- 1/4 cup finely chopped flat-leaf parsley
- Salt and freshly ground black pepper
- Ground nutmeg
- 1 1/2 pounds ground sirloin
- 3 tablespoons Worcestershire sauce, plus 2 tablespoons for sauce
- 1 egg
- 1/2 cup saltine crumbs
- 3 tablespoons grated onion and juice grate directly over meat
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons butter
- 2 medium onions, chopped
- 1 bay leaf
- 2 cloves garlic, chopped
- 1 1/2 teaspoons ground or rubbed sage, half a palmful
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 4 cups loosely packed watercress
Crispy Roasted Potatoes (Curtis Stone)

Place the oven rack in the lower third of the oven then place a large, heavy baking sheet on the rack
- 6 medium russet potatoes (about 6 ounces each), peeled
- 1/3 cup olive oil
- 5 garlic cloves, skin on
- 1 tablespoon coarsely chopped fresh rosemary leaves
- 1 tablespoon fresh thyme leaves
- Kosher salt and freshly ground black pepper
- 2 teaspoons coarsely chopped fresh parsley, for garnish
- Sea salt, for garnish
Orzo with Cherry Tomatoes, Feta and Mint (Giada)

Bring a large pot of salted water to a boil over high heat
- 1 pound orzo
- 1/2 cup extra-virgin olive oil
- 1 medium shallot, finely chopped
- 1 clove garlic, peeled and smashed
- 2 pints cherry tomatoes, quartered
- 1 cup crumbled feta
- 1 cup arugula
- 1/2 cup chopped fresh mint
- 3 tablespoons white balsamic vinegar
- 1 1/4 teaspoons kosher salt, plus for the pasta water
- 1/4 teaspoon freshly ground black pepper
Doritos Casserole*

Preheat oven to 350 degrees
- 1 (family size) bag Doritos, any flavor (I used Nacho Cheese)
- 1 onion, diced
- 1 pound lean ground beef
- 1 clove garlic, minced
- 1 package McCormick low sodium taco seasoning
- 1 cup Old El Paso salsa
- 1 cup Daisy sour cream
- 1 can Campbells cream of chicken or mushroom soup
- 2 cups Kraft shredded cheese, (I used tex mex blend)
- Optional toppings
- Lettuce
- Tomato
- Olives

Pierogis "at a whole new level" Casserole

Preheat oven to 400 degrees
- 16 oz frozen pierogis
- 2-3 slices cooked bacon,crumbled
- 1/3 cup cream cheese
- 1/2 cup chicken broth
- 1/4-1/2 cup shredded cheddar cheese
- chopped green onions, optional
Cheddar Bacon Wedge Salad (Pioneer Woman)

In a medium skillet, fry the bacon slices until slightly crisp
- 4 slices thick-cut bacon
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 1 clove garlic, pressed
- 1/2 teaspoon distilled white vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 head iceberg lettuce
- 1/2 cup grated sharp Cheddar or Cheddar-Jack

- 2 cloves garlic, minced
- 3 cups cherry tomatoes, quartered (about 1 1/2 pints)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup packed fresh basil leaves, torn
- 8 ounces fresh mozzarella, diced (about 1 1/4 cups)
