CROCKPOT CHICKEN AND DUMPLINGS

Easy chicken and dumplings made in the crockpot! I use biscuit dough for easy, fluffy dumplings every time!
- 2 pounds boneless skinless chicken breasts or thighs
- 1 sweet onion diced
- 1 clove garlic minced
- 2 cans (10 ounces each) cream of chicken
- 3 cups chicken broth
- 1 teaspoon poultry seasoning
- 1 teaspoon dried parsley
- 1 teaspoon cracked black pepper
- 1 package 8-count refrigerated biscuit dough
Apple and Onion Confit Crostini (Giada)

For the confit: In a high-sided skillet, heat the butter and oil over medium heat
- 2 tablespoons unsalted butter, at room temperature
- 2 tablespoons extra-virgin olive oil
- 1 large onion, thinly sliced
- 1 green apple, such as Granny Smith, unpeeled, cored, and thinly sliced
- 1 red apple, such as Washington, unpeeled, cored, and thinly sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup apple cider vinegar
- 2 tablespoons maple syrup
- 1 tablespoon chopped fresh thyme leaves
- 1 French baguette, thinly sliced into 26 (1/4 to 1/2-inch thick) slices
- Extra-virgin olive oil, for drizzling
- 3 ounces creamy gorgonzola cheese sliced into 26 (1/4-inch thick) 1-inch squares
- 1 tablespoon chopped fresh thyme leaves
MYOTO - Make Your Own Take Out: Thai Chicken Noodle Soup

Directions Heat a large heavy-bottomed soup pot with vegetable oil, 2 turns of the pan, over high heat
- 2 tablespoons vegetable oil, 2 turns of the pan
- 1 medium size yellow onion, peeled, quartered and thinly sliced
- 3 garlic cloves, peeled and finely chopped
- 2 poblano or anaheim peppers, seeded and thinly sliced
- Salt and freshly ground black pepper
- 1 cup shredded carrots, available in pouches in the produce department
- 6 cups, 1 1/2 quarts, chicken broth
- 1 1/2 pound chicken tenders cut into bite size chunks, 2 packages
- 2 small bundles from a 3.75 ounce package of bean thread noodles, there is usually 3 bundles in one package (recommended: Kame)
- 3 tablespoons cilantro leaves, chopped
- 15 fresh basil leaves, roughly chopped
- 1 lime
Asparagus and Pistachio Pesto Pasta

Trim the tough ends from the asparagus
- 1 pound thin asparagus
- 1/4 cup fresh mint leaves
- 1/4 cup fresh flat-leaf parsley leaves
- 1/4 cup fresh tarragon leaves or 1/2 cup fresh basil leaves
- 1/4 cup grated Parmigiano-Reggiano
- 3 to 4 tablespoons toasted pistachios
- 1 clove garlic, grated or made into a paste
- Juice of 1 lime or 1/2 lemon
- 1/3 to 1/2 cup EVOO
- Salt and freshly ground pepper
- 1 pound penne
- 1 cup fresh shelled peas or defrosted frozen organic peas
- Shaved Parmigiano-Reggiano, for garnish
Orecchiette with Broccoli and Sausage

Bring a large pot of generously salted water to a boil and drop in the Orecchiette
- For the Pasta:
- 1 1 1 pound dried orecchiette pasta
- 2 2 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 1 1 pound sweet Italian sausage, casing removed
- 4 4 4 cloves garlic, sliced
- 1/4 1/4 1/4 teaspoon red pepper flakes
- 1 1 1 bunch fresh broccoli, cut into bite sized pieces

Place the graham crackers into the bowl of a food processor and pulse until finely ground
- 1 (14.4-oz) box chocolate graham crackers, broken into pieces
- 3-2/3 cups whole milk
- 2 (3.5-oz) packages instant vanilla pudding mix
- 2 (8-oz) packages cream cheese, softened
- 2 (7.5-oz) jars marshmallow créme
- 1 (11.5-oz) bag milk chocolate chips
- 1 (10.5-oz) bag mini marshmallows, divided

- 1/3 cup butter , softened
- 3 to 3.5 cups powdered sugar
- 1 teaspoon lemon juice (or vanilla)
- (optional) 1 1/2 teaspoons lemon zest
