- 3 firm-ripe medium Bosc or Bartlett pears, peeled, cored and cut into 1/2-inch pieces
- Squeeze lemon juice
- 2 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2 teaspoons plus 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup finely chopped pecans
- 1/4 teaspoon freshly grated nutmeg
- 1/8 teaspoon ground cloves
- Pinch kosher salt
- 4 tablespoons unsalted butter, softened
- 1 cup low-fat plain Greek yogurt
- 2 tablespoons maple syrup
- 1/2 teaspoon finely grated orange zest, plus 1 tablespoon juice

This easy baked spaghetti casserole is a family favorite that is easy to prepare!
- SAUCE:
- 12 oz spaghetti noodles cooked
- 1/4 cup fresh parsley
- 1-1/2 cups mozzarella cheese
- 1/3 cup fresh parmesan cheese
- Homemade Sauce
- OR
- 1 lb ground beef or italian sausage
- 1 small onion diced
- 2 cloves garlic
- 1/2 tablespoon Italian seasoning
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon chili flakes
- 1/2 green pepper diced
- 32 oz pasta sauce
Apple Oatmeal Muffins (Healthy)

Preheat oven to 375 degrees
- 1 1/4 1 1/4 1/4 cups whole wheat flour
- 1 1/4 1 1/4 1/4 cups old-fashioned oats
- 1 1 1 teaspoon baking powder
- 1/2 1/2 1/2 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon salt
- 1/2 1/2 1/2 teaspoon cinnamon
- 1/4 1/4 1/4 teaspoon cardamom
- 1/8 1/8 1/8 teaspoon ginger
- 1 1 1 cup unsweetened applesauce
- 1/2 1/2 1/2 cup light coconut milk with the juice of half a lemon (or low fat buttermilk)
- 1/2 1/2 1/2 cup packed muscovado sugar (or brown sugar)
- 2 2 2 tablespoons melted coconut oil (or vegetable/canola oil)
- 1 1 1 large egg, lightly beaten
- 1/2 1/2 1/2 teaspoon vanilla extract
- 2 2 2 small Gala apples, chopped into small pieces
- turbinado (raw) sugar and nutmeg, for sprinkling on top

Cook the sugar, water and lemon juice together, stirring occasionally until the sugar is dissolved
- 1 1 1 cup sugar
- 1 1⁄2 1⁄2 cup water
- 1 1⁄4 1⁄4 cup lemon juice
- 3 3 3 cups watermelon
Chicken Cutlets with Orange and Arugula (Rachael Ray)

- 1 1/2 cups bread crumbs
- 1/2 cup grated Parmigiano-Reggiano
- A little fresh grated nutmeg
- A handful flat-leaf parsley, finely chopped
- 1 orange, zested
- 1 cup all-purpose flour
- 3 eggs, beaten
- 4 small boneless, skinless chicken breasts, about 6 ounces each
- Salt and freshly ground black pepper
- Olive oil or vegetable oil, for frying
- 2 seedless oranges
- 2 yellow or orange tomatoes, seeded and diced
- 1 sprig fresh oregano, leaves finely chopped, optional
- 1/2 small red onion or 2 to 3 scallions, chopped

- 4 cups baby arugula leaves

Southern-Style Chicken n' Dumplings
- To Cook Chicken And Make Broth:
- Serves: 8 servings
- 1 whole chicken, thawed and cleaned (remove and discard giblets from cavity)
- 1/2 cup carrots, celery, and onion (OPTIONAL-to flavor the chicken broth)
- Water to completely cover chicken in a large stockpot.
- To Make The Dumplings:
- 1 cup all purpose flour
- 1 teaspoon salt
- 2 heaping Tablespoons vegetable shortening
- 1/2 cup HOT water
- 1/2 cup plus 2 Tablespoons all purpose flour
- To finish soup:
- Two large chicken bouillon cubes
- 1 Tablespoon butter
- 1/4 cup water mixed with 2 Tablespoons flour
- Salt and Pepper, to taste (approx. 1 teaspoon salt, 1/2 teaspoon pepper)
