For the cowboy butter: Well in advance, make the cowboy butter
- Cowboy Butter:
- 2 sticks salted butter, softened
- 1/3 cup finely minced fresh parsley, plus more if needed
- 1/4 teaspoon red pepper flakes
- A pinch of coarsely ground black pepper, plus more if needed
- 1 clove garlic, finely minced
- 1 lemon, zested and halved
- Salt, optional
- Steaks:
- Salt and freshly ground black pepper
- 4 rib eye steaks, 2 inches thick
- 2 tablespoons butter

- 16 slices of French bread, sliced 1/2 to 3/4 of an inch thick
- 4 cloves minced garlic
- 1/4 cup Pompeian Imported Extra Virgin Olive Oil
- 2 cups chopped plum tomatoes
- 1 cup shredded BelGioioso Mozzarella cheese, or 1 cup fresh BelGioioso Mozzarella cheese, chopped, drained
- 2 tablespoons minced, fresh parsley
- 4 leaves Bibb lettuce
- Salt and pepper to taste

- 2 summer squash, quartered lengthwise and cut into 1-inch cubes
- 4 cremini mushrooms, halved
- 1 yellow onion, peeled and sliced into 1-inch strips
- 1/4 cup extra-virgin olive oil 1 teaspoon salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 1 tablespoon dried Italian herb mix or herbs de Provence 1 pound penne pasta
- 3 cups marinara sauce (store bought or homemade)
- 1 cup grated fontina cheese 1/2 cup grated smoked mozzarella
- 1 1/2 cups frozen peas, thawed 1/4 cup grated Parmesan, plus 1/3 cup for topping
