Salsa Chicken Over Rice

Treat your family to a suppertime change of pace - serve this southwestern skillet
- 2 cup cooked white rice, kept warm
- 1 tablespoon Vegetable Oil
- 1 pound Boneless skinless chicken breast halves, cut into strips
- 1 medium onion, chopped
- 1 red bell pepper, small, sliced
- 1 (16 oz.) ORTEGA® Salsa Prima Homestyle Mild
- 1/2 cup Mexican-blend cheese, shredded, divided
- 1 container (8 oz.) sour cream, optional
- 1/4 cup cilantro, fresh optional
- Serves: 4

- Cook Time: 15 minutes
Orange Juice Drink (Vitamix)

Place all the ingredients into the Vitamix container and secure lid
- 1 cup milk
- 3 Tbsp pasteurized egg whites or egg substitute
- 1 tsp vanilla extract
- 1/4 cup sugar
- 1/4 cup flat orange pop
- 6 oz can frozen OJ concentrate
- 1/2 cup ice

Heat the oil in a large skillet over medium heat until hot
- 2 tablespoons olive oil
- 1 cup fresh mushrooms, sliced
- 4 green onions, sliced
- 1 tablespoon garlic, minced
- 2 (14 1/2 ounce) cans diced tomatoes, undrained
- 1/2 cup fresh parsley, chopped
- 1/4 cup white wine
- 8 ounces fettuccine
- 1/2 lb raw shrimp, peeled and deveined
- 2 tablespoons lemon juice

For the meatloaf: Preheat the oven to 350 degrees F
- 1 cup milk
- 6 bread slices
- 2 pounds ground beef
- 1 cup grated Parmesan
- 1 teaspoon salt
- Freshly ground black pepper
- 1/4 teaspoon seasoned salt, such as Lawry's
- 1/4 to 1/2 cup minced flat-leaf parsley
- 4 eggs, beaten
- 8 to 12 thin bacon slices
- 1/2 cup ketchup
- 6 tablespoons brown sugar
- 1 teaspoon dry mustard
- Dash or 2 hot sauce (more if you like)
- Dash or 2 Worcestershire sauce

1) Preheat the oven to 350 F (180 C) degrees and prepare your muffin pan by lining it with paper liners
- 1-3/4 c. All-purpose flour
- 3/4 c. Granulated white sugar
- 1 tsp. Baking powder
- 1/4 tsp. Baking soda
- 1/4 tsp. Salt
- 1 tsp. Ground cinnamon
- 1/2 c. Unsalted butter melted and cooled to room temperature
