Ingredients

  • 1-3/4

    c. All-purpose flour

  • 3/4

    c. Granulated white sugar

  • 1

    tsp. Baking powder

  • 1/4

    tsp. Baking soda

  • 1/4

    tsp. Salt

  • 1

    tsp. Ground cinnamon

  • 1/2

    c. Unsalted butter melted and cooled to room temperature

  • 2

    Large Eggs

  • 1

    tsp. Vanilla extract

  • 3

    Ripe banana (about 1 & 1/2 cup) mashed with a fork

Directions

1) Preheat the oven to 350 F (180 C) degrees and prepare your muffin pan by lining it with paper liners. You can use silicon liners, if you prefer. 2)Combine all dry ingredients together in a large bowl, stirring them gently with a wire whisk. 3) In another bowl mash bananas with the fork and mix with melted butter, vanilla extract and eggs. 4) Using wooden spoon or rubber spatula gently fold wet ingredients into dry ones. Don’t over mix to avoid getting tough bread. Mix just to the point when you get homogeneous mixture. 5) Using the spoon to fill muffin cups up to 3/4. 6) Bake for 20-25 minutes or until the toothpick or a knife comes out clean, when you stick it in the middle of the cupcake. Let cool for few minutes and serve still warm. If you are making Banan Muffins ahead, just warm them up in the microwave before serving.
