- 2 1/4 cups all-purpose flour

- 3 cup flour
- 3 tsp baking powder

- 1/2 cup (1-stick) cold unsalted butter
- 2 3/4 cups white whole wheat flour
- 1 tablespoon baking powder*
- 1 teaspoon ground cinnamon
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg (freshly grated if possible)
- 1/4 teaspoon ground allspice
- 1 cup toasted pecan halves, chopped, divided
- 2/3 cup canned pumpkin
- 1/3 cup maple syrup
- 1/2 teaspoon maple flavoring (optional but delicious)
- 2 large eggs
- 1 to 2 tablespoons milk (for brushing the scones)
- 1/2 cup powdered sugar
- 1 tablespoon pure maple syrup
- 1/2 teaspoon maple extract or pure vanilla extract
- 2 to 3 teaspoons milk or cream

Directions Rinse the beans under cold water, sorting out any rocks/particles
- 4 cups dry pinto beans
- 1 pound thick-cut bacon, cut into pieces
- 2 whole green bell peppers, diced
- 1 whole onion, diced
- 1 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons mustard
- 1 tablespoon chili powder, optional
- 2 teaspoons salt, more to taste
- 2 teaspoons black pepper, more to taste
- 4 cloves garlic, minced

- 1 jalapeno pepper, seeded and finely chopped

- Chicken:
- 4 (5–6 oz) boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 4 garlic cloves, minced
- 1-1/4 tsp salt
- 1/2 tsp freshly ground black pepper

- 12 new potatoes
- 2 tablespoons olive oil
- 1 1/2 cups grated Monterey Jack cheese
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 tablespoon finely minced fresh chives
- 1 clove garlic, pressed
- Salt and pepper
Sweet Potato Soup (Vitamix)

First, heat olive oil in a sauté pan and add the coriander, cinnamon, onion, carrot, and garlic
- Optional:
- 1 Tbsp olive oil
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 small onion, peeled & separated
- 1 carrot, halved
- 1 garlic clove
- 1 medium sweet potato or yam, baked & quartered
- 1/2 green apple, seeded
- 2 cups chicken stock
- Salt & pepper to taste
- 2 3" to 4" pieces of cooked ham, warmed
- 1/4 cup warm/hot cream
- 2 Tbsp maple syrup
- Minced chives, for garnish
