Herb-Roasted Turkey with Pan Gravy

Rinse turkey with cool water, and pat dry with paper towels
- 1 18- to 21-pound fresh turkey, thawed if frozen, giblets and neck removed from cavity and reserved for gravy
- 6 tablespoons unsalted butter, softened
- Grated zest of 1 lemon
- 3 tablespoons finely chopped fresh flat-leaf parsley
- 3 tablespoons finely chopped fresh thyme leaves
- 3 teaspoons coarse salt, plus more for seasoning
- 1 1/2 teaspoons freshly ground pepper, plus more for seasoning
- 3 to 4 lemons, each cut into quarters
- 2 to 3 onions, each cut into 6 wedges
- 1 cup dry white wine or water
- 3 cups Giblet Stock or homemade or low-sodium canned chicken stock
Chicken Cacciatori

This is a delicious chicken dish with peppers, onions and crushed tomato sauce
- 1 whole chicken separated into 8 pieces
- 3 tbsp olive oil
- 1 large onion sliced
- 3 garlic cloves minced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 3/4 c chicken broth
- 2 tsp vinegar
- 1 1/2 cups crushed tomatoes
- 1 tsp dried oregano
- 1 tsp red pepper flakes
- Salt and pepper to taste

- 8 oz. cream cheese, softened to room temperature
- 1 c. mayonnaise
- 1 1/2 c. shredded Monterey Jack, divided
- 1/2 c. finely grated Parmesan
- 1 14- oz. can artichoke hearts, chopped finely
- 2 cloves garlic, minced
- kosher salt
- Freshly ground black pepper
- 12 oz. lump crab meat
- 2 green onions, sliced

- 2 1/2 cups unbleached white flour (substitute half whole wheat or spelt flour if desired)

- 1 1/4 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon ground cinnamon
- Pinch of chipotle or ancho chile powder
- 1/4 teaspoon kosher salt
- 5 strips bacon (1/3 pound)
- 4 tablespoons unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 2 pounds ground meat (beef, pork, chicken, turkey, bison)
- 1/2 of a medium onion , chopped fine
- 1 tsp unrefined sea salt
- 1/2 tsp herbamare seasoning (just add more salt if you don't have this)
- 1 tsp cumin powder
- 2 cups (packed) baby spinach, chopped
