Homemade Beef Jerky

Place sliced London broil in plastic bag with vinegar and let it marinate overnight in the refrigerator
- 1 pound (lean) london broil
- 1/2 cup Coconut Vinegar (found in Health Food Stores)
Cauliflower "Macaroni" Salad

Steam cauliflower until very tender but not mushy
- 2 cups raw cauliflower, broken into very small pieces
- 6 hard-cooked eggs, chopped
- 2 large tomatoes, finely chopped
- 1 cucumber, chopped
- 1 green bell pepper, chopped
- 3 stalks of celery
- 1 large white onion, finely chopped
- 3 cups creamy salad dressing (such as Miracle Whip®)
- 1 1/2 tablespoons ground black pepper,
- or to taste
- 1/2 tablespoon salt, or to taste
Cauliflower Pizza Crust

To rice the cauliflower, cut florets into chunks and pulse in a food processor until you see rice-like bits
- 1 cup cooked, riced cauliflower
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese

- 1/2 tsp crushed garlic

Sauté chopped onion and sliced carrots for 10-minutes in olive oil
- 3 tablespoons of olive oil
- 1 pound of rotisserie chicken shredded
- 1 pound of spicy sausage links cut into bite size pieces
- 2 medium zucchini
- 1 small onion
- 3 medium carrots peeled and sliced
- 1 box of chicken broth or two cans of chicken broth
- 1 can of diced tomatoes (14.5 ounces)
- 1.5 teaspoons of Italian seasoning
- 1.0 teaspoons of garlic powder
- Salt and pepper to taste
