To make the rice, heat oil in a medium saucepan
- Brown Rice
- 1 tbsp extra-virgin olive oil
- 1/2 onion, chopped
- 1/2 red bell pepper, chopped
- 2 cups water
- 1 cup uncooked short- grain brown rice
- 1/4 cup finely chopped parsley
- Salt and freshly ground black pepper (optional)
- Salmon
- 4 skinless salmon fillets (about 4 ounces each)
- 1 tbsp extra-virgin olive oil
- 1 garlic clove, pressed or minced
- 1 tbsp grated fresh ginger
- 1 tsp soy sauce
- 1 tsp maple syrup
- 2 green onions, chopped

Crock Pot Chicken Tikka Masala

Classic chicken tikka masala, ready when you walk in the door
- 3 lb chicken thighs, boneless, skinless
- 1 large onion,
- diced 4 cloves garlic, minced
- 1/2 - 1 T fresh ginger, minced
- 1 large can crushed tomato's
- 1 1/2 c plain yogurt
- 2 T olive oil
- 2 T garam masala
- 1 t turmeric powder
- 1 T cumin
- 1/2 t paprika
