Bacon Gorgonzola Chicken Salad

You can either use a rotisserie chicken and shred it or bake your own and shred it
- 3 cups cooked shredded chicken breast
- 8 strips cooked crumbled bacon
- 1/4 cup crumbled gorgonzola cheese
- 3/4 cup finely chopped celery
- 1/2 cup mayonnaise
- 1/2 cup prepared blue cheese dressing
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh thyme leaves, finely chopped
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic salt
Basil, Sausage and Egg Muffins (Mini Frittatas)

Preheat oven to 350°F. Grease muffin pan with butter (alternatively, use ghee or coconut oil)
- 1/2 cup chopped onion
- 1/2 pound raw sausage, casings removed (lamb works especially well)
- 1 cup basil leaves, coarsely chopped
- 1/2 cup thinly sliced green onions
- cherry tomatoes (approx. 20), halved*
- 10 eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- butter, ghee,and/or coconut oil
Deconstructed Salade Niçoise

1. Place beans in a medium saucepan; cover with water
- 6 ounces haricots verts or green beans
- 1/4 cup fresh lemon juice
- 2 1/2 tablespoons minced fresh flat-leaf parsley
- 1 tablespoon thyme leaves
- 2 tablespoons minced shallots
- 2 tablespoons unsalted chicken stock
- 1 1/2 teaspoons minced fresh rosemary
- 4 teaspoons olive oil
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 niçoise olives, pitted and chopped
- 2 cups gourmet salad greens
- 1/2 cup grape tomatoes
- 2 hard-cooked large eggs, quartered
- 1 (4.5-ounce) jar sustainable albacore tuna in oil (such as Wild Planet), drained and chunked
Lauren's Lasagna

Add a little olive oil to water in big noodle pan
- Water
- Olive Oil
- 9-11 Lasagna Noodles
- Large Container of Ricotta Cheese (whole milk is best)
- 2 Cup Pkg of Shredded Mozzarella Cheese
- Grated Parmesan Cheese
- 2 Jars of Classico Tomato and Basil Sauce
- (or make your own)
- 1/2 pound of hamburger (optional)
Broccoli and Cauliflower Gratin with Sausage

Preheat the oven to 450°F (225°C)
- 1/2 leek
- 1/2 yellow onion
- 8 oz. broccoli, in florets
- 4 oz. cauliflower, in florets
- 8 oz. sausage links, precooked
- 1 oz. butter, for frying
- 1 tablespoon Dijon mustard
- 8 tablespoons sour cream or crème fraîche
- 2 1/2 oz. shredded cheese
- 2 tablespoons fresh thyme
- salt and pepper
Perfect Prime Rib

Place rib roast on a plate and bring to room temperature, about 4 hours
- 6 pounds prime rib roast
- 1/4 cup unsalted butter, softened
- 1 1/2 tablespoon freshly ground black pepper
- 1 1/2 teaspoon Herbes de Provence
- Kosher Salt

- 3 eggs, separated
- 3 tablespoons of whole milk cottage cheese
- 1/4 teaspoon of lemon juice
Fried Cabbage with Sausage

This is a quick and easy dish
- 1 stick butter
- 1 small head of cabbage, chopped
- 1 small onion, chopped
- 1 pound smoked sausage, sliced into round pieces (I use turkey)
- 1 (15 ounce) can diced tomatoes or rotel tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Mint Chocolate Chip Cookies Recipe

1. Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1/2 cup butter or margarine, softened
- 1/4 to 1/2 teaspoon mint extract
- 6 to 8 drops green food color
- 1 egg
- 1 cup creme de menthe baking chips
- 1 cup semisweet chocolate chunks
No Potato Beef Stew

Place all ingredients into gallon zip lock bag, except broth and freeze flat
- 1 lb. beef cubed
- 1 chopped onion
- 2 large peeled and diced turnips (optional)
- 1/2 can of tomato paste
- 2 cloves of minced garlic
- 2 tsp dried thyme
- 2 medium carrots chopped
- 3 celery stalks diced
- 2 bay leaves
- 2 tsp dried parsley
- 2 TBSP apple cider vinegar
- 3 cups green beans (optional)
- 1 cup beef broth
- Sea Salt and pepper as desired
