Mini Apple Pies

This is a Pampered Chef recipe and will reference some of our great products
- Two rounds of pre-made pie-crust (or your own) to make about 12 hand pies.
- 2 Tablespoons butter
- 6-8 apples (any variety) peeled, cored, and chopped into small pieces
- 1 Tablespoon lemon juice
- 1/2 cup granulated sugar, organic or your choice
- 1/4 cup brown sugar, organic or your choice
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger (or 1 tsp The Pampered Chef’s Cinnamon Plus)
- 1/2 - 1 cup water
- 1 Tablespoon cornstarch
Prosciutto Wrapped Asparagus

Place each prosciutto strip on a chopping board at a 45 degree angle
- 12 asparagus spears
- 6 prosciutto slices/strips
- A little oil for frying
Garlic Herb Roasted Shrimp with Homemade Cocktail Sauce

Preheat oven to 400 degrees
- Cocktail Sauce:
- 2 lbs. of Shrimp, peeled and deveined
- 3-4 garlic cloves, minced
- 4 tablespoons of olive oil
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of dry basil
- salt & pepper
- 1/2 cup of ketchup
- 2 heaping tablespoons of horseradish
Saffron Rice with Chicken

Heat oil in a large, heavy-bottomed saucepan on medium heat
- 2 tablespoons olive oil
- 4 chicken pieces (excess fat removed)
- 1 red pepper (large, seeded and cut into thin strips)
- 1 onion (medium, diced)
- 1 cup long grain rice
- 2 cups chicken stock
- 1 pinch saffron
- 1 cup frozen peas
Balsamic Glazed Steak Rolls

Start by prepping the steak
- For the veggie filling:
- 1 1/2 – 2 lb skirt steak/ 8-10 thin sliced sirloin
- Salt & Pepper, to taste
- 3 tbsp Worcestershire sauce
- Any steak seasoning you like
- 1 tbsp olive oil
- 1 carrot
- 1 bell pepper
- 1/2 a zucchini (depending on size)
- 5-6 green onions
- 2 cloves of garlic
- 1 tsp Italian herb seasoning
- For the balsamic glaze:
- 2 tsp butter
- 2 tbsp finely chopped shallots
- 1/4 cup balsamic vinegar
- 1/4 cup beef broth
Polish Sausage Stew

Place a large stew pot over medium-high heat
- 1/2 cup olive oil
- 5 pounds smoked Polish sausage, cut in 1-inch pieces
- 2 pounds onions (2 to 3 large), peeled and cut in large dice
- 2 pounds carrots (4 to 6 large), cleaned, peeled and cut in large dice
- 2 pounds turnips, peeled and cut in 1-inch wedges
- 1 teaspoon freshly ground black pepper
- 1 tablespoon kosher salt
- 2 ounces garlic (6 to 8 cloves), peeled and thinly sliced
- 4 bay leaves
- 1 teaspoon hot pepper flakes
- 2 sprigs thyme
- 1 tablespoon ground fennel
- 1 (6-ounce) can tomato paste
- 4 (12-ounce) cans chopped tomatoes in puree
- 6 cups unsalted chicken stock
- 1 head savoy cabbage (about 1 pound), cored and cut in large dice
- 1 pound string beans, ends cut off and cut in half on the bias
- Kosher salt and freshly ground black pepper to taste
Pecan Pie Tartlets

Preheat the oven to 350 degrees
- 1 Pillsbury refrigerated pie crust
- 2 eggs
- .44 cups of sugar (use a 2/3 measuring cup, then fill it 2/3 full)
- 1/3 teaspoon salt
- 1/6 cup melted butter (2.67 tablespoons)
- 2/3 cup light corn syrup
- 1 1/3 cups pecan pieces
Lucky 7 Layer Dip

- 1 (15-ounce) can refried beans
- 2 tablespoons hot sauce
- Extra-virgin olive oil, for drizzling
- 4 scallions, cut into 1 inch pieces
- 1 (16 to 18 ounce) jar green chili or tomatillo salsa
- 2 tablespoons chopped cilantro, a palm full, chopped
- 1 (15-ounce) can black beans
- 2 teaspoons ground cumin, 2/3 palm full
- 1 (16 to 18 ounce) jar chipotle salsa
- 2 cups sour cream
- 1 lime, zested and juiced
- 2 ripe avocados
- 2 cloves garlic, finely chopped
- 1 lemon, juiced
- 1 jalapeno, seeded and finely chopped
- Salt
- 2 plum tomatoes, diced
- Pimiento stuffed jumbo Spanish olives, chopped
- Tortilla chips, buy 2 sacks in 2 different colors/varieties
Creamy Turkey Vegetable Soup Recipe

In a large saucepan, saute onion in butter until tender
- 1 large onion, finely chopped
- 2 tablespoons butter
- 3 cups diced small red potatoes
- 2 cans (14-1/2 ounces each) chicken broth
- 2 cups cooked cubed turkey breast
- 2 cups frozen mixed vegetables, thawed
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon poultry seasoning
- 2 cups heavy whipping cream
