- 2 1/2 pounds beef chuck, cut into 2-inch cubes
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 2 medium onions, cut into 6ths
- 5 cloves garlic, crushed
- 1 tablespoon tomato paste
- 1/3 cup all-purpose flour, or to cover
- 10 cups cold water, or chicken or beef broth, homemade or low-sodium canned
- 6 sprigs parsley
- 6 sprigs fresh thyme
- 2 bay leaves
- 1 1/4 pounds medium red potatoes, quartered
- 4 medium carrots, cut into 2-inch pieces
- 2 celery stalks, cut into 2-inch pieces
- 7 canned whole, peeled tomatoes, lightly crushed
- 2 to 3 teaspoons red wine vinegar, or to taste
Homemade Hummus

1) In a saucepan over, combine the chickpeas, water, garlic cloves, bay leaf and 1/2 teaspoon of the salt
- 2/3 cup dried chickpeas, picked over and rinsed, soaked overnight, and drained
- 3 cups water
- 2 Cloves Garlic
- 1 bay leaf
- 3/4 teaspoon salt
- 1 tablespoon olive oil
- 3/4 cup plus 2 tablespoons sliced green (spring) onion
- 2 tablespoons apple cider vinegar
- 3 tablespoons chopped fresh cilantro
- 1 teaspoon ground cumin
Baked Ziti Casserole

1 Heat oven to 375°F. 2 Cook and drain pasta as directed on package
- 2 cups uncooked ziti pasta (6 oz)
- 1 lb bulk Italian pork sausage
- 1 can Progresso™ (18.5 oz) heart healthy tomato soup with Parmesan
- 1/4 teaspoon pepper
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 cup shredded mozzarella cheese (4 oz)
- Chopped fresh basil leaves, if desired
Warm Toasted Marshmallow S'mores Bars

1 Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs
- 1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
- 1 cup graham cracker crumbs
- 1 cup butter or margarine, melted
- 3 cups milk chocolate chips (18 oz)
- 4 1/2 cups miniature marshmallows
Fudge-Filled Peanut Butter Cookies

- 1/2 cup creamy peanut butter

- 1 1/2 to 2 pounds chicken thighs, skin removed

- 2 tablespoons extra-virgin olive oil, divided
- 1 onion, chopped
- 1/4 pound white button mushrooms, quartered
- 3 cloves garlic, minced
- 1 tomato, chopped
- 1 tablespoon flour
- 1 teaspoon dried tarragon
- 1/2 cup white wine
- 1 cup chicken stock, plus more if needed
- 1/4 cup Dijon mustard
- 2 tablespoons sour cream

- 2 chicken bouillon cubes
- 1 pound egg noodles

- 1/2 cup whipping cream

Mushroom Fricassee with Fresh Herbs

Leave small mushrooms whole, halve medium-size mushrooms, and quarter large mushrooms (12 cups)
- 2 pounds assorted fresh mushrooms, such as cremini, button, shiitake, chanterelle, porcini, oyster, and/or morels, cleaned and tough stems trimmed
- 2 tablespoons walnut oil
- 1 tablespoon butter
- 1/2 cup finely chopped shallots (4 medium)
- 2 cloves garlic, minced
- 1/2 teaspoon coarse sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup Madeira or chicken broth
- 1/2 cup whipping cream
- 1 tablespoon snipped fresh chives
- 1 teaspoons snipped fresh rosemary or 1/4 to 1/2 teaspoon dried rosemary, crushed
- 1/4 cup snipped fresh parsley
Balsamic Shredded Beef

- 4-5 lb beef chuck roast
- 1 cup beef broth
- 1/2 cup light brown sugar
- 1/4 cup balsamic vinegar
- 1 Tbsp soy sauce
- 1 tsp kosher salt
- 1/4 tsp crushed red pepper flakes
- 3 cloves garlic, pressed
