PREPARE THE CHICKEN Preheat the oven to 400°
- CHICKEN
- 8 skin-on, bone-in pieces of chicken
- 1/4 cup minced onion
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- 2 tablespoons olive oil
- 1/2 teaspoon cayenne pepper
- 1 tablespoon sea salt
- RATATOUILLE
- 1/2 medium eggplant (6 ounces), diced (2 cups)
- 1 teaspoon kosher salt, plus more for seasoning
- 1/4 cup extra-virgin olive oil
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 1 medium yellow onion, diced
- 1/2 red bell pepper, diced
- 3 tablespoons sliced garlic
- 2 basil sprigs
- 3 oregano sprigs
- 1/2 cup dry white wine
- 3 tomatoes (3/4 pound), diced (2 cups)
- 1 cup tomato puree
- freshly ground pepper
Chicken Provencal

In a large skillet, brown chicken in oil remove and set aside
- chicken 1 broiler/fryer (3 to 4 pounds) cut up
- canola oil 1 tablespoon
- onions 1 1/2 cups chopped
- garlic 3 cloves minced
- great northern beans 2 (15 1/2-ounce) cans rinsed and drained
- carrots 3 mediums sliced 1/4 inch thick
- chicken bouillon 1 tablespoon granules
- thyme 1 teaspoon dried
- oregano 1/2 teaspoon dried
- pepper 1/2 teaspoon
French Apple Cake

- 1 1/2 pound granny smith apple, peeled, cored, cut into 8 wedges, and sliced 1/8 inch thick crosswise
- 1 tablespoon Apple Brandy, or White Rum

- 1 cup (5 ounces) plus 2 tablespoons all-purpose flour

- 1 cup whole milk
