Five Minute Chocolate Cake for One Person

Add dry ingredients to mug, and mix well
- 4 tablespoons flour
- 4 tablespoons sugar
- 2 tablespoons cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips (optionl)
- A small splash of vanilla extract
- 1 large coffee mug (microwave safe)
Broccoli Soup

Wash broccoli and cut off flowerettes, set aside, Combine broccoli and broth and bring to boil
- 1-1/2 to 3 lbs. fresh broccoli
- 5 c. chicken stock (broth)
- 1/4 c. cutter
- 2 T. chopped onion
- 3 celery stalks, minced
- 1/4 c. flour
- 2 c. heavy cream or haf and half, scalded
- 1/4 c. nutmeg
- salt, pepper and parmesan cheese
Cheesy Scalloped Potatoes

Place a third of the potatoes in a shallow 3-qt
- 5 large potatoes, peeled and thinly sliced
- 3 tablespoons all-purpose flour
- 1-1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1-1/4 cups shredded reduced-fat cheddar cheese, divided
- 3 ounces reduced-fat Swiss cheese slices, finely chopped (3/4 cup), divided
- 2 medium onions, finely chopped
- 1-1/2 cups 2% milk
- 2 tablespoons minced fresh parsley
Tortellini Carbonara

In a large saucepan, combine the bacon, cream, parsley and cheese; cook until heated through
- 8 bacon strips, cooked and crumbled
- 1 cup whipping cream
- 1/2 cup minced fresh parsley
- 1/2 cup grated Parmesan or Romano cheese
- 1 package (9 ounces) refrigerated cheese tortellini
White Sauce

- 3 tablespoons butter
- 3 tablespoon all-purpose flour
- 1/2 teaspoon salt
- Dash pepper
- 2 cups milk
Ambrosia Salad

Drain fruits well. Mix lightly but thoroughly
- 1 cup mixed fruit or canned fruit cocktail
- 1/2 cup mandarin oranges
- 1/2 cup pineapple tidbits
- 1/2 cut crushed pineapple
- 1/2 cup miniature marshmallows
- 1/2 cup flaked coconut
- 3/4 cup dairy sour cream
- 1/4 cup maraschino cherries, halved
- 1/4 cup canned red seedless grapes
- Lettuce cups
- Salad dressing, if desired

- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3/4 cup (1-1/2 stick) butter, softened
- 1 cup (6 oz.) Nestle Toll House Semi-Sweet Chocolate Morsels
- 1 cup chopped nuts
- Sweetened whipped cream or ice cream (optional)

- 1 pouch (11 oz.) light tuna in water
- 1/3 cup each finely chopped celery, cucumber and red onion
- 1/4 cup mayonnaise
- 2 tsp. dill weed
- 1 tsp. lemon juice
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 4 ciabatta rolls, split
- 2 cups (8 oz.) shredded cheddar cheese
Ham and Cheese Casserole

Preheat oven to 350. Spray a 3 quart baking dish with non-stick cooking spray
- 1 bag Ore-Ida Southern-style hash brown potatoes (32 ounces)
- 2 cups ham, chopped
- 2 packages Sargento shredded Swiss cheese (5 ounces), divided
- 1 jar sliced mushrooms (4.5 ounces), drained
- 1 cup onion, chopped (I use frozen chopped onions from the store)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 can cream of mushroom soup (10-3/4 ounces)
- 1 cup whole milk
- 2 tablespoons butter, melted
