Banana Split Fruit Salad

Cut each banana in half widthwise
- 2 medium bananas
- 1/4 medium seedless watermelon
- 1 carton (6 ounces) custard-stype vanilla yogurt
- 1 cup fresh raspberries
- 1/4 cup chopped walnuts
Lemon Cheese Sauce (for cakes)

- 2-3 lemons
- 3 egg yolks
- 1/2 cup butter
- 1 cup sugar
Cranberry Spinach Salad

Mix all dressing ingredients in jar and shake
- Dressing:
- 1 lb. spinach
- 1 cup dried cranberries
- 3/4 c. sliced or slivered almonds (toast in 350 degree oven for a few minutes, 5 at most)
- 2 T. sesame seeds
- 1 T. poppy seeds
- 1/2 c. white sugar
- 2 tsp. minced onion
- 1/4 tsp. paprika
- 1/4 c. red or white wine vinegar
- 1/4 c. cider vinegar
- 1/2 c. vegetable oil
Chocolate Chip Bundt Cake

Beat 3 minutes. Add German Chocolate bar
- 1 box yellow cake mix
- 1 pkg. instant vanilla pudding
- 1 cup milk
- 1/2 cup oil
- 4 eggs
- 1 German chocolate bar, grated
- 6 oz. chocolate chips
Buttermilk Ranch Chicken

Combine all ingredients up to oil; marinate 45 minutes (or overnight)
- 1 cup buttermilk
- 1/2 cup mayonnaise
- 1/2 tsp. dried mustard
- 1 tbsp. chopped fresh chives
- 1/2 tsp. dried dill
- salt and pepper
- 4 thin-cut chicken breast cutlets
- 2 tbsp. oil
Baker's Dozen Yeast Rolls

In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt
- 2 to 2-1/2 cups flour
- 2 tablespoons sugar
- 1 package (1/4 ounce) quick-rise yeast
- 1/2 teaspoon salt
- 3/4 cup warm water (120 to 130 degrees)
- 2 tablespoons plus 4 teaspoons butter, melted, divided
- 3/4 cup shredded sharp cheddar cheese
- 2 teaspoons honey
Chicken and Dumplings (Quicker)

In a Dutch oven, combine the first six ingredients; bring to a boil, stirring occasionally
- Dumplings:
- 1-1/2 cups 2% milk
- 1-1/2 cups frozen mixed vegetables, thawed
- 2-1/2 cups cubed cooked chicken
- 1 can (10-3/4 ozs.) condensed cream of chicken soup, undiluted
- 1/2 teaspoon garlic powder
- 1/4 teaspoon poultry seasoning
- 1 cup biscuit/baking mix
- 1/3 cup French-fried onions, coarsely chopped
- 7 tablespoons 2% milk
- 1/2 teaspoon dried parsley flakes
Macaroni & Cheese

- 2 cups elbow macaroni
- 2 cups half & half or milk
- 1 can chicken broth
- 2 cups shredded cheddar cheese
Veggie Quesadillas

In medium bowl, combine salsa, beans, and zucchini
- 1 cup salsa
- 1 cup drained canned black beans, rinsed
- 1 zucchini, shredded
- 8 - 6 " fat-free flour tortillas
- 3/4 cup shredded Monterey Jack cheese
Cinnamon Scones

Directions Heat oven to 425°F
- Prep Time: 25 mins
- Total Time: 40 mins
- Yield: 9-12 scones
- Ingredients
- 2 cups all-purpose flour ( I use 1/2 whole wheat and 1/2 white)
- 1 cup rolled oats ( quick or old fashioned, uncooked)
- 1/4 cup granulated sugar, plus
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter or 8 tablespoons margarine, chilled and cut into pieces
- 3/4 cup milk
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup toasted chopped pecans
- 2 teaspoons ground cinnamon
- Glaze
- 3/4 cup confectioners' sugar
- 3 -4 teaspoons orange juice or 3 -4 teaspoons milk
- 1 -2 teaspoon orange zest, grated
- Directions
- Heat oven to 425°F.
- Spray a cookie sheet with cooking spray.
- In food processor, combine flour, oats, 1/4 cup granulated sugar, baking powder and salt; mix well.
- Cut butter into 5-6 pieces, add to food processor, and pulse until butter is size of small peas--do not over pulse.
- Transfer dry mixture to larger bowl.
- In small bowl, combine milk, egg and vanilla; blend well.
