Cook rice in 2-1/2 cups boiling salted water
- 1/2 - 1 lb. sausage (use 1 lb.)
- 1 minced onion (2-1/2" diameter)
- 1-4 oz. can drained mushrooms
- 1 cup rice (converted)
- 1/3 cup evaporated milk
- 2/3 cup chicken broth
- slivered almonds

- 1 (16oz.) can cream-style corn
- 1 (10 oz.) pkg. frozen chopped broccoli, cooked and drained
- 1 egg, beaten
- 1/2 c. coarse saltine cracker crumbs (approx. 12 crackers)
- 1 tbsp. instant minced onion
- 1 tbsp. butter or margarine, melted
- 1/2 tsp. salt
- dash pepper
- 1 quarter c. saltine cracker crumbs (6 crackers)
- 1 tbsp. butter or margarine, melted
CHERRY DELIGHT

While waiting for Cool Whip to thaw, prepare and mix the other ingredients
- Cherry Delight
- 1 can cherry pie filling
- 1 can crushed pineapple drained
- 1 can Eagle Brand condensed sweetened milk
- 1 C nuts (I used pecans)
- 1 9 oz container of Cool Whip
- While waiting for Cool Whip to thaw, prepare and mix the other ingredients.
- Fold in thawed Cool Whip, refrigerate until serving.
Lemon Pull-Apart Coffee Cake

1. In a large bowl, combine the first five ingredients
- Glaze:
- 1/4 cup sugar
- 1/4 cup chopped walnuts
- 1/4 cup golden raisins
- 2 tablespoons butter, melted
- 1 teaspoons grated lemon peel
- 1 tube (12 ounces) refrigerated buttermilk biscuits
- 1/2 cup confectioners' sugar
- 1 tablespoon lemon juice
Carrot Cake Cookies

In a mixing bowl, cream butter and sugar
- 6 tablespoons butter or stick margarine, softened
- 3/4 cup packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon each baking soda, salt and ground cinnamon
- 1 cup grated carrots
- 1/2 cup each raisins and chopped pecans
Corn Pudding

Directions with ingredients
- Mix Corn with eggs:
- 1 cup creamed corn
- 1 cup whole corn
- 1 cup sugar
- 1/2 tsp. salt
- 2 Tblsps. flour
- 4 - 6 eggs
- 1 cup milk
- Combine in buttered pyrex dish. Dot with butter before baking. Bake about 1 hour at 350 degrees until set.
Pie Crust

Put first 3 ingredients in large bowl and mix well with table fork
- 4 cups all-purpose flour lightly spooned into cup
- 1 tablespoon sugar
- 2 teaspoons salt
- 1-3/4 cups solid vegetable shortening (do not use oil, lard, margarine or butter)
- 1 tablespoon white or cider vinegar
- 1 large egg
Sweet-and-Sour Popcorn Chicken

In a large skillet or wok, stir-fry green pepper and onion in oil for 3-4 minutes or until crisp-tender
- 1 medium green pepper, cut into 1-inch pieces
- 1 small onion, thinly sliced
- 1 tablespoon vegetable oil
- 1 can (20 ounces) unsweetened pineapple chunks
- 3 tablespoons white vinegar
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 1/3 cup packed brown sugar
- 2 tablespoons cornstarch
- 1 package (12 ounces) frozen popcorn chicken
Baked Fish with Cheese Sauce

Place fish in a greased 11-in x 7 in
- 4 orange roughy fillets (4 oz. each)
- 1 Tbsp. butter, melted
- 2 Tbsp. dry bread crumbs
- 1 Tbsp. all-purpose flour
- 3/4 cup 2% milk
- 1/2 cup shredded cheddar cheese
- 1-1/2 tsp. Dijon mustard

- 6 slightly beaten egg yolks

- 1 frozen Sara Lee pound cake (family size)
