Spicy Buffalo Hummus

- 1 (15-oz) can garbanzo beans*
- 1 T tahini
- 2 T olive oil
- 2 – 3 T buffalo wing sauce or hot sauce
- juice of 1/2 lemon
- 1/2 red bell pepper, roughly chopped
- 1 t garlic powder
- salt + pepper, to taste
- 1/4 cup blue cheese crumbles
- pita chips, red bell pepper + celery, for dipping
Overflowing Stuffed Portobellos

Preheat oven to 375°F. Remove stems from mushrooms and set aside
- 4 large Portobello mushrooms
- 1 tsp olive oil
- 1 zucchini, chopped
- 1/2 Spanish onion, chopped
- 1 tbsp fresh minced garlic
- 1 tbsp balsamic vinegar
- 1 medium tomato, chopped
- 2 roasted red peppers, chopped
- Handful fresh basil leaves, chopped
- 1/2 cup whole-wheat bread crumbs
- 1/2 cup Parmesan or Romano cheese
- Sea salt and ground black pepper, to taste
Gooey Chocolate Mug Cake

In mug, crack egg, add powdered sugar and cocoa powder
- 1 egg
- 1/4 c. powdered sugar
- 1-2 Tbsp. cocoa powder (depending on how chocolatey you want your cake)
- 1 standard-sized mug
- Some sort of topping (optional)
- milk chocolate chips, hot fudge, whipped cream, ice cream, strawberries
Red Beans and Rice

- 2 tbsp oil
- 2 onions, chopped
- 4-5 cloves of garlic, minced
- 2 stalks of celery, chopped
- 1 green pepper, seeded and diced
- 1 jalapeno, seeds removed and finely chopped, or a poblano pepper for less heat and a different flavor
- 1 bay leaf
- 2 tsp thyme
- 1 tsp oregano
- 2-3 tsp Cajun seasoning
- 1/2 tsp salt(more to taste)
- 4 C tomato puree or a 32 oz can
- 2 tbsp tomato paste
- 1 C dried kidney beans, cooked(or approximately 1 can of kidney beans drained and rinsed)
- 2-3 C cooked brown rice
- 1/4-1/2 tsp liquid smoke(optional)
Queso Blanco

- 1 tablespoon olive oil
- 1/4 cup white onion, finely diced
- 1 large jalapeno, seeds and stem removed; finely diced
- 12 oz white American cheese, shredded
- 4 oz Monterrey Jack cheese, shredded (don’t use pre-shredded)
- 1/2 to 1 cup cream, half-and-half, or whole milk
- 1 – 2 roma tomatoes, seeds removed and diced
- 1 small bunch cilantro, roughly chopped
Roasted Red Pepper and Feta Rice

- 1 tablespoon olive oil
- 1 small onion (chopped)
- 2 cloves garlic (chopped)
- 2 roasted red peppers (sliced)
- 1 teaspoon oregano (chopped or 1/2 teaspoon dry)

- 1 cup long grained rice (I used brown rice)
- 2 1/2 cups broth (chicken or vegetable)

Slice tofu into about 10 pieces Put flour in one bowl
- One block of extra firm tofu
- 1/2 cup flour
- 2 eggs
- 2 Tb. milk
- 1/2 cup breadcrumbs
- 1/2 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1 1/2 tsp grated parmesan
- 3-4 Tb. canola oil
- 1/2 cup shredded mozzarella cheese
- 1/2 cup marinara

- 1/2 cup panko bread crumbs
- 1/4 cup finely chopped green onions

Creamy Caprese Pasta

- 1 pound whole wheat pasta (noodles such as penne work best)
- 1 cup of your favorite pasta/tomato sauce
- 1/3 cup heavy cream or half and half
- 1/3 cup freshly grated parmesan cheese + more for garnish
- 4 ounces fresh mozzarella, cut into cubes
- 1 pint of grape tomatoes (I cut some in half and left some whole)
- 1 bunch of fresh basil leaves
