Baked Zucchini Sticks and Sweet Onion Dip

1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions

- 3/4 cup mayonnaise (I use light mayo)
- 3/4 cup sour cream (I use light sour cream)
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1/4 to 1 cup buttermilk
- 1 small bunch of chives or 2 scallions, roughly chopped
- Small handful of parsley
- 1 clove garlic
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper

- 6 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 12 ounces fresh baby spinach, chopped

Crunchy Cabbage Salad with Peanut Dressing

Combine cabbages, carrots, bell pepper, avocado and half the basil and cilantro in a large bowl
- For the salad:
- 1/2 head napa cabbage, thinly shredded
- 1/4 head red cabbage, thinly shredded
- 1 carrot, peeled and grated
- 1/2 red bell pepper julienned
- 1/4 cup cilantro leaves
- 1/4 cup basil leaves
- 1 avocado diced
- 1/4 cup chopped cashews
- 2 tablespoons black sesame seeds
- For the dressing:
- 2 tablespoons smooth peanut butter
- 2 tablespoons rice-wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon chili garlic sauce
- 1 clove garlic finely minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon water

Crab Cake 1. Line a baking sheet with aluminum foil
- Crab Cakes
- 1 large egg
- 2 1/2 tablespoons mayonnaise (I like Hellman’s Real)
- 1 1/2 teaspoons Dijon mustard (I like Maille brand)
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 cup finely diced celery (you’ll need one stalk)
- 2 tablespoons finely chopped fresh parsley
- 1 pound lump crab meat*
- 1/2 cup panko (I like the Whole Foods 365 brand for this recipe)
- Canola oil
- Tartar Sauce
- 1 cup mayonnaise
- 1 1/2 tablespoons sweet pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon minced red onion
- 1-2 tablespoons lemon juice, to taste
- Salt and freshly ground black pepper, to taste

- 1 pound slender asparagus spears, trimmed, cut into 1- to 1 1/2-inch pieces
- 1/4 cup olive oil
- 1 tablespoon finely grated lemon peel
- 2 teaspoons chopped fresh tarragon plus more for garnish
- 1 5- to 5 1/2-ounce log soft fresh goat cheese (the pre-crumbled stuff will not melt as well)
- Fresh lemon juice to taste (optional)
