Veggie Rice Bowl Recipe

Directions Prepare rice mix and instant rice separately according to package directions
- Ingredients
- 1 package (6.2 ounces) fast-cooking long grain and wild rice mix
- 2 cups uncooked instant rice
- 1/2 cup chopped green onions
- 1/2 cup chopped celery
- 1/2 cup chopped fresh mushrooms
- 1/2 cup chopped carrot
- 3 tablespoons butter
- 1 cup frozen peas
Muffin Tray Pizzas

Directions: Place one biscuit in bottom of muffin tray
- Ingredients:
- 2 pkgs of Pillsbury biscuits
- 1 small jar pizza sauce
- 1 bag of shredded mozzarella cheese

- **Demarle perforated sheet
CORNED BEEF AND CABBAGE (SLOW COOKER)

1. Place meat, potatoes, onion and cabbage in a large slow cooker
- 1 3 lb corned beef brisket
- 5 medium size potatoes, scrubbed and sliced in
- 1 inch chunks DO NOT PEEL.
- 1 large onion cut into wedges
- 4 cups apple juice
- 1 cup brown sugar, packed
- 1 tbsp Dijon mustard
Chocolate Cupcakes with a Kick

Directions 1. Preheat oven to 350 degrees F
- Ingredients
- 1 2-layer-size chocolate or devil's food cake mix
- 1 1/4 cups sour cream
- 3 eggs
- 1/3 cup cooking oil
- 2 tablespoons instant coffee crystals
- 1/2 - 1 teaspoon ground chipotle chile pepper
- 1 11 1/2 ounce package semisweet chocolate chunks
- 2 teaspoons all-purpose flour
- 1 recipe White Frosting (see recipe below)
- 2 ounces semisweet chocolate, chopped
- 1/4 cup whipping cream
- White Frosting
- 1 8 ounce package cream cheese
- 1/2 cup butter
- 1/2 teaspoon vanilla
- 2 - 2 1/2 cups powdered sugar

Lemon-Cream Cheese Pie

Directions: In a saucepan, combine the water, sugar, and cornstarch
- Ingredients:
- 2 1/2 cups water
- 1 cup sugar
- 1/2 cup cornstarch
- 3 well-beaten egg yolks
- 1/3 cup lemon juice
- 3 tablespoons butter or margarine
- Dash salt
- 1 14 - ounce can sweetened condensed milk
- 1 8 - ounce package cream cheese, softened
- 1/3 cup lemon juice
- 1 4-serving-size package instant lemon pudding mix
- 2 recipes Baked Pastry Shell (see recipe below)
- Whipped cream
- Lemon slices
- Baked Pastry Shell
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup shortening
- 4 - 5 tablespoons cold water
Orange Fluff Jello Salad Recipe:

Directions: Mix together pudding, Jell-o, and water over medium heat until it boils
- Ingredients:
- 1 large package Cook and Serve vanilla pudding
- 1 large package orange jell-o
- 2 cups water
- 1 16 oz Cool-Whip (lite or fat-free is fine)
- 1/2 bag mini marshmallows
- 1 can pineapple tidbits (Any size, depending on your preference)
- 1 can mandarin oranges (Any size, depending on your preference)
- 2 bananas, sliced (Optional, put in before serving so they don't turn brown in the fridge)
M ini Cheesecakes

- 1 Pk (8oz) cream cheese, softened
- 1/3 Cup Sugar
- 1 Egg
- 1 Tsp. vanilla extract
- 1/4 Tsp. almond extract
- 12 Vanilla wafer cookies (or chocolate wafers)

Instructions Make the cookie dough: Preheat oven to 325 degrees

- 1 stick butter, unsalted (1/2 cup), softened
- 1/2 cup white sugar
- 1/3 cup packed brown sugar
- 1/2 cup peanut butter

- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt (less if you don’t like salty/sweet)

- 2 cups chocolate chips
- 8 ounces cream cheese, softened

Peanut Butter Cup Rice Krispie Treats

Directions: Bring a saucepan of salted water to a boil
- Ingredients:
- Brussels sprouts:
- 1 1 1 lb. brussels sprouts, trimmed and halved
- Canola oil (for deep-frying)
- 1/4 1/4 1/4 cup flour
- 2 2 2 eggs, lightly beaten
- 1/2 1/2 1/2 cup Panko breadcrumbs
- 1/2 1/2 1/2 cup grated Parmesan cheese
- 1/2 1/2 1/2 tsp. salt
- Freshly ground black pepper
- Buffalo Hot Sauce:
- 1/4 1/4 1/4 cup hot sauce
- 1/4 1/4 1/4 cup butter, melted
- Blue Cheese Dip:
- 1 1 1 cup sour cream
- 1/2 1/2 1/2 cup mayonnaise
- 2 to 4 2 to 4 4 oz. blue cheese, crumbled (depending on how much you like blue cheese)
- 1 1 1 clove garlic, minced
- 1 1 1 Tbsp. white wine vinegar
- 2 2 2 Tbsp. chives, chopped
- Freshly ground black pepper
