Spinach, Pesto, and Feta-Stuffed Pork Tenderloin with Chunky Tomato Sauce

Preparation 1. Preheat oven to 500°

- 1 (1-pound) pork tenderloin, trimmed
- 1/4 cup sun-dried tomato pesto (such as Classico)
- 1 cup baby spinach
- 1/4 cup (1 ounce) crumbled feta cheese with basil and sun-dried tomatoes
- Olive oil-flavored cooking spray
- 1/4 teaspoon black pepper
- 1 (14.5-ounce) can diced tomatoes with balsamic vinegar, basil, and olive oil (such as Hunt's), undrained
Layered Banana Split

Grease a 9×13-inch baking dish; set aside
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 8 ounces cream cheese, at room temperature
- 1/2 teaspoon vanilla
- 1/4 cup granulated sugar
- 2 Tablespoons + 3 1/2 cups cold milk, divided
- 16 ounces Cool Whip topping, divided
- 1 (23-ounce) container of frozen sliced strawberries, thawed and drained well
- 1 (20-ounce) can crushed pineapple, drained well
- 2 (3.4 ounce) boxes of banana cream pudding instant pudding
- Chocolate syrup
- Maraschino cherries (optional, but encouraged!)
- Nuts (optional)
Easy Cream Cheese Brownies

Chocolate Mousse Cheesecake

Layer 1: Oreo Cookie Crust Crush cookies in a food processor or in a ziploc bag with a rolling pin or mallet

- 30-32 Oreo cookies (or chocolate sandwich cookies) for a high crust
- 4 Tbsp unsalted butter (1/2 stick), melted
- 1-2 tsp espresso powder (optional)

- 1 pound (two 8-ounce boxes) cream cheese, at room temperature

Chicken Salad in Lettuce Cups

Cook pasta al dente, according to package directions
- 4 cups cooked chicken, shredded by hand (top tip: use a rotisserie chicken for ease and flavor!)
- 1/2 slivered almonds, toasted
- 1 lb farfalle pasta, freshly cooked
- 1/2 cup (about 1 pepper) roasted red pepper, diced
- 1/2 cup (about 1 pepper) roasted yellow pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh flat-leaf parsley, chopped
- 1/4 cup capers, drained (optional)
- Salt and pepper to taste
- 1 1/4 cups Red Wine Vinaigrette (optional, recipe below)
