Loaded Potato Soup

In 12-inch skillet, cook bacon over medium heat 6 to 7 minutes or until crisp; drain on paper towels
- 1 pkg (12 oz) bacon
- 1 1/2 cups chopped onion
- 2 lb baking potatoes, peeled, cubed
- 2/3 cup butter
- 3/4 cup all-purpose flour
- 4 cups milk (for thicker soup use cream)
- 1 tsp salt
- 1 tsp freshly ground pepper
- 1 cup diced cooked ham
- 1 container (8oz) sour cream
- 2 1/2 cups shredded sharp cheddar cheese
- 3/4 cup sliced green onions
Bacon Onion Butter

In a medium skillet, saute bacon over medium heat until mostly cooked
- 1 cup (2 sticks) butter, softened
- 10 strips bacon, diced
- 1/3 cup onion, finely diced
- 1 tablespoon worcestershire sauce
- 1 teaspoon freshly ground pepper

- 1- 15 oz can shoe peg corn - drained
- 1- 15 oz can blackeyed peas - drained
- 2 avacados
- 2/3 cup cilantro - chopped (or 1/2 cilantro 1/2 parsley)
- 2/3 cup green onions - chopped
- 1 cup tomatoes - diced
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 5-8 cloves garlic - minced
- 3/4 tsp salt
- 1/8 tsp cumin
Broccoli Cauliflower Cheese Soup with Sausage

Instructions In a small container, mix onion powder, garlic powder, mustard seed, marjoram, thyme
- 1 1/2 pounds sausage sliced & quartered
- 1/2 pound broccoli cut in florets
- 1 1/2 pounds cauliflower cut in florets
- 1 cup heavy cream
- 1 cup water
- 1 cup chicken broth
- 2 tablespoon butter
- 1 cup sharp cheddar cheese grated
- 5 slices bacon cooked to crisp and chopped
- 1/4 teaspoon mustard seed
- 1/4 teaspoon marjoram
- 1/4 teaspoon thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- salt & ground black pepper to taste
- olive oil
Candied Almonds

Directions In a mixing bowl, combine together the brown sugar, white sugar, cinnamon, and salt
- 1 1/2 cup brown sugar
- 1 1/2 cup white sugar
- 3 tbs of cinnamon
- 1/8 tsp of salt

- 4 1/2 cups of almonds

- 1/3 cup boiling water

- 3/4 teaspoon vanilla extract
- 1/2 cup half-and-half cream
Bacon Beer Cheese Dip

Directions Preheat the oven to 375°F
- 1 large Italian loaf
- 8 ounces cream cheese, at room temperature
- 8 ounces (1 cup) lager or beer of choice, plus 1 tablespoon, divided
- 1 tablespoon whole grain mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon cornstarch
- 8 ounces swiss cheese, shredded
- 8 ounces sharp cheddar cheese, shredded
- 10 slices bacon, cooked and crumbled
- 3 cloves garlic
- 1/4 cup chopped mixed herbs (such as chives, parsley, and dill)
- 3 tablespoons olive oil
- Chopped chives, to top
- Broccoli and pretzels to serve, optional

Taco Casserole

- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 ounce) can refried beans
- 2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
- 1 cup salsa (I prefer mild, but if you would like to kick it up a notch, go for it)
- 2 green onions, chopped
- 1 (2 1/3 ounce) cansliced black olives
- 1 tomatoes, chopped
- 2 cups corn chips (coarsely crushed or chopped)
