VELVEETA® Easy Chicken Primavera

- 1 pound boneless, skinless chicken breasts, cut in bite-size pieces
- 3 cups water
- 1 (12 ounce) package tri-color rotini pasta, uncooked
- 2 cups broccoli florets
- 1/2 pound VELVEETA®, cut into 1/2-inch cubes
- 1 teaspoon dried basil leaves
- 1 teaspoon black pepper
- 2 small tomatoes, coarsely chopped
Alfredo Sauce

Melt butter or margarine in a saucepan over medium heat
- 3 tablespoons butter
- 8 fluid ounces heavy whipping cream
- salt to taste
- 1 pinch ground nutmeg
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Romano cheese
- 1 egg yolk
- 2 tablespoons grated Parmesan cheese
Chocolate Buttercream Frosting

- 1 cup butter softened, 2 sticks
- 1 cup Swerve Confectioners or Sukrin Melis
- 2/3 cup unsweetened cocoa powder
- 1/4 cup unsweetened almond or coconut milk adjust as needed
- 2 teaspoons vanilla extract
- 1 teaspoon stevia glycerite stevia or monk fruit powder can also be used
Bacon Wrapped Chicken Breast with Apple

Instructions In a small bowl, combine BBQ sauce, brown sugar, lemon juice and peeled/chopped apples
- 4 boneless skinless chicken breasts
- 1 cup BBQ sauce, I LOVE Sweet Baby Rays
- 1/4 cup brown sugar
- 1/8 cup lemon juice, fresh or from a bottle
- 5 small apples, peeled and chopped, I used gala
- 8 slices bacon
Authentic Pasta Carbonara

1. Bring a large pof of water to a boil and season with salt
- 1 1 1 lb spaghetti noodles
- 1 1 1 Tbls salt
- 1 1 1 lb bacon
- 4 4 4 egg yolks
- 2 2 2 whole eggs
- 1 1/2 1 1/2 1/2 C grated pecorino romano cheese, divided
- 1/2 1/2 1/2 tsp freshly ground pepper
- 2 2 to Tbls freshly chopped parsley, to garnish
Loaded Baked Potato Salad

1. Wash the potatoes and poke holes in them with a fork
- 5 lb russet potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 lb bacon, cooked and crumbled
- 1 small onion, chopped
- chives, to taste
- 1 1/2 cups shredded cheddar cheese
- salt and pepper to taste
Southern Coffee Cheescake

In a mixing bowl combine sugar and cream cheese and mix on medium speed until well blended and creamy
- Crust:
- 1/4 lb butter
- 2 cups (1 pkg.) finely ground chocolate wafer crumbs (can also use Teddy
- Grahams)
- 1/4 Cup sugar
- Filling:
- 2 lb softened cream cheese
- 1 1/2 cups sugar
- 2 tsp instant coffee, dissolved in Kahlua
- 1 1/2 Tbs Kahlua
- 1/2 cup chopped pecans
- pinch of salt
- 4 lg eggs
- 2 oz melted white chocolate
Grilled Tri-Tip

Using a sharp knife, cut small slits into the top of the roast
- 4 pounds tri-tip roast
- 4 cloves garlic, peeled and very thinly sliced
- 1/3 cup salt
- 1/3 cup black pepper
- 1/3 cup garlic salt

- 2 Large Handfuls Fresh Green Beans (about one pound), washed and trimmed
- 2 Cloves Garlic, minced
- 1 Medium Lemon, or 2 Tablespoons Lemon Juice
- 2 Tablespoons Panko Bread Crumbs
- 1 1/2 Tablespoons Extra Virgin Olive Oil
- 1/2 teaspoon Coarse Sea Salt
