Coleslaw with a Twist

Red sweet peppers and carrots mixed with green and red cabbages give this side dish salad color
- 1 cup shredded red cabbage
- 6 cups shredded green cabbage (1-1/4-pound head)
- 1/2 cup shredded carrot (1 medium)
- 1/2 of a small red sweet pepper, cut into thin bite-size strips
- 1/3 cup light mayonnaise or salad dressing
- 2 tablespoons lime or lemon juice
- 1 tablespoon snipped fresh dill weed or 1 teaspoon dried dill weed (optional)
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Spicy Potato Wedges

Preheat the oven to 450°F / 230°C
- 2 1/2 pounds (1.13 kg) potatoes (or 3 pounds for less spicy potatoes)
- 2 tablespoons olive oil
- 2 garlic cloves, minced (or maybe 1/2 teaspoon garlic powder)
- 2 teaspoons dried parsley
- 1/8 teaspoon cayenne
- 1/2 teaspoon paprika
- 3/4 teaspoon salt (I have to admit that I end up adding a lot more)
- 1/2 teaspoon pepper

Banana-Multigrain Streusel Muffins

- Nonstick cooking spray
- 1/4 cup canola oil
- 1/4 cup reduced-fat creamy peanut butter
- 1/2 cup packed brown sugar
- 1 egg
- 1 cup whole bran cereal
- 1 cup mashed very ripe bananas (about 3 medium)
- 1/4 cup light sour cream
- 1 tablespoon vanilla
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 2 tablespoons flaxseed meal
- 2 teaspoons baking powder
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup buttermilk or sour milk
- 1 recipe Streusel Crunch Topping
