Spicy Beef Kababs

Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl
- • 1 1/2 to 2 pounds boneless beef sirloin
- • 3 cloves garlic, minced
- • 2 teaspoons smoked paprika
- • 1/2 teaspoon ground turmeric
- • 1 teaspoon ground cumin
- • 1 teaspoon kosher salt
- • 1/2 teaspoon freshly ground black pepper
- • 1/3 cup red wine vinegar
- • 1/2 cup olive oil
- • Special equipment: 4 (12-inch) metal skewers
Mango Chicken

1. Cut each chicken breast into 3 pieces and dip in egg and flour/breadcrumbs
- 4 Chicken breast filets
- 1 egg
- Flour or breadcrumbs
- 2 Tbsp. Olive oil

- 1 med. Onion finely sliced
- 1 Tbsp. wine or cider vinegar
- 1 cup Chicken Stock
- 1 tsp. minced ginger

Mom's Guacamole

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons kosher salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cayenne pepper
- 2 tablespoons (approximately 1 large) jalapeno pepper, seeded and finely minced
- 1 (8.5-ounce) can cream-style corn
- 1/3 cup finely grated onion
- 1 1/2 cups buttermilk

Meat Sauce

Heat heavy saucepan on medium for five minutes
- 1 24 oz. Jar Spaghetti Sauce
- 12 oz. Ground beef (or Ground Buffalo)
- 1 Tbs chopped garlic
- 1 Cup chopped onion
- 1 tsp kosher salt
- 1 tsp dried leaf oregano
- 1 Tbs chopped fresh basil
- 1 tsp granulated sugar
- 1/2 Cup red wine
- 1/4 Cup Romano cheese
- Add salt, pepper to taste
Ceviche-Style Grilled Mahi-Mahi

Rub the fillets with kosher salt and set aside
- 4 skinless mahi-mahi fillets, approximately 2 pounds
- 2 teaspoons kosher salt
- 1/2 cup diced red onion
- 1/4 cup freshly squeezed lime juice

- 1 lb boneless chicken breast
- 3/4 C onion
- 1/2 C celery
- 3/4 C carrots
- 7oz can peas, drained (roughly 3/4C)

- 3 cloves garlic, minced

- 1 bay leaf

- 1 1/2 C heavy cream

- 1 loaf Artisanal dark bread (whole wheat, pumpernickel, seedless rye)

- 4 cups heavy cream

- ½ T cornstarch
- ½ T white pepper
