Crispy Cheddar Chicken

1. Cut each chicken breast into 3 large chunks
- Chicken:
- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated
- 1 t dried parsley
- Sauce:
- 1 14 ounce can cream of chicken soup
- 2 T sour cream
- 2 T butter
Potato Casserole

Preheat oven to 350 degrees F
- House Seasoning:
- 2 cups mashed potatoes
- 1/2 cup sour cream
- House Seasoning, recipe follows
- 1 small onion, sliced thin
- 1 small bell pepper, sliced thin
- 8 tablespoons (1 stick) butter
- 1 1/2 cups grated Cheddar
- 4 medium potatoes, cooked
- 6 slices bacon, cooked crisp
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months.
Chicken Sausage Burgers

Put 2 tablespoons extra-virgin olive oil in a pot over medium high heat
- Extra-virgin olive oil, for liberal drizzling plus 2 tablespoons
- 1/4 pound pancetta, chopped
- 2 red onions chopped
- Salt and black pepper
- 1 fresh bay leaf
- 2 pounds ground chicken
- 1 1/2 tablespoons fennel seed, lightly toasted
- 1 teaspoon crushed red pepper flakes -- go heavier for extra spicy
- 1/4 teaspoon allspice
- Zest and juice of 1 orange
- 3 tablespoons finely chopped rosemary, 4 to 5 sprigs
- 4 cloves garlic, grated with a microplane or the small side of a box grater
- 2 generous handfuls of grated Parmigiano Reggiano or Romano cheese
- 2 tablespoons Worcestershire sauce, eyeball it
- 1/2 cup aged balsamic vinegar
- 3 tablespoons honey or dark brown sugar
- 1/2 endive, chopped
- 1 cup arugula leaves, shredded
- 1/2 radicchio, chopped
- 4 crusty rolls, split, toasted and drizzled with extra-virgin olive oil or buttered

- Sauce:
- • 1 pound cube steak, sliced into 1-inch wide strips
- • 18 (12-inch) bamboo skewers
- • 1 egg
- • 1 cup buttermilk
- • 1 teaspoon hot sauce
- • 3/4 cup all-purpose flour
- • 1/2 cup semolina flour or cornmeal
- • 1 teaspoon paprika
- • 1 teaspoon garlic powder
- • 1 teaspoon onion powder
- • 1/4 teaspoon cayenne pepper
- • 1 teaspoon salt
- • 1/2 teaspoon freshly ground black pepper
- • 4 cups canola oil

"Blaked" Nacho Bites

- Cooking spray
- 2 cooked chicken breasts, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded Mexican cheese
- Desired toppings (like diced tomatoes, black olives and chopped cilantro)

- Frozen bread dough *homemade is fine as well*

- 1 (16- to 18-ounce) round loaf Italian or sourdough bread
- 1/4 cup butter melted
- 1 teaspoon dry ranch dressing mix
- 1/2 cup (about 5 slices) cooked chopped thick-cut bacon
- 1/4 cup jarred jalapeño peppers, chopped
