Italian Chicken Sliders

Tomato Jam: Heat the olive oil in a medium pot over medium heat
- Tomato Jam:
- • 2 tablespoons olive oil
- • 1 small onion, diced
- • 2 cloves garlic, chopped
- • 1 (15-ounce) can diced tomatoes
- • 1/4 cup balsamic vinegar
- • 1/2 teaspoon dried oregano
- • 2 tablespoons brown sugar
- • Pinch salt and freshly ground black pepper
- • 3 tablespoons chopped fresh parsley leaves
- Sliders:
- • 1 pound boneless skinless chicken breast, about 2 large breasts
- • Salt and fresh ground black pepper
- • 3 tablespoons olive oil
- • 12 slices pancetta
- • 1 (8-ounce) piece fresh mozzarella, sliced into 12 slices
- • 12 small crusty dinner rolls, cut in half with a fork
- • Tomato jam
- • 12 fresh basil leaves
Grilled Stone Fruit

Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat)
- Nonstick spray
- 3 firm but ripe nectarines, halved, pitted
- 3 firm but ripe purple/black plums, halved, pitted
- 3 firm but ripe red plums, halved, pitted
- 6 metal skewers or thick wooden skewers soaked in water 30 minutes
- 3 tablespoons sugar
- *Other fruit substitutions can be apricots and peaches
Crushed Cheesy Potatoes

Preheat Broiler Wash potatoes well and place in salted water
- 4 smaller potatoes (red, yellow, whatever)
- 1 TBS olive oil
- 1 garlic clove
- 1 TBS chives
- salt
- pepper
- 2 TBS grated cheese(any kind you like...I used Pepper Jack)
- 1 TBS Parmesan
Baked Meatballs

Preheat the oven to 400 degrees F
- • 1/2 pound ground pork
- • 1/2 pound ground lamb
- • 1/2 pound ground round
- • 5 ounces frozen spinach, thawed and drained thoroughly
- • 1/2 cup finely grated Parmesan
- • 1 whole egg
- • 1 1/2 teaspoons dried basil
- • 1 1/2 teaspoons dried parsley
- • 1 teaspoon garlic powder
- • 1 teaspoon kosher salt
- • 1/2 teaspoon red pepper flakes
- • 1/2 cup bread crumbs, divided
Layered Lasagna Casserole

Cook meat sauce and set aside
- 2 x Meat sauce (spaghetti) recipe
- 1 12-oz container medium pasta (skinny lasagna noodles or dumplings)
- 2 lb container of ricotta cheese
- 1 egg
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/4 c. parsley (optional but recommended)
- 2 c. mozzarella (more?)
- Grated Parmesan cheese
Spicy Sausage Meatloaf Patties

Preheat oven to 425 degrees F
- 2 tablespoons extra-virgin olive oil, plus some for drizzling
- 1 red bell pepper, finely chopped
- 1 large onion, chopped and divided
- 2 ribs celery, chopped
- 1 cup shredded carrots
- Salt and pepper, for seasoning, plus coarse black pepper for finishing sauce
- 1/2 pound ground beef
- 3/4 pound bulk hot sausage
- 3/4 pound ground sweet sausage
- 1 egg
- 3/4 cup bread crumbs, 3 generous handfuls, Italian or plain
- 1/2 cup grated Parmigiano or Romano, a couple of handfuls
- 1/8 pound pancetta, 4 slices, chopped
- 3 cloves garlic, chopped
- Splash red wine
- 1/2 cup beef stock
- 1 can petite diced tomatoes or stewed tomatoes
- 1 tablespoon Worcestershire sauce
- 2 teaspoons hot sauce
Pasta Bake

Dump all dry, uncooked pasta in a medium baking dish (9x13), (9x9)
- 1 box of ziti pasta
- 1 jar of Prego Pasta sauce
- 1 jar of water
- Mozzarella
Streusel Coffee Cake

Topping. In small mixing bowl, combine topping ingredients
- Topping:
- 1/2 cup brown sugar
- 1/4 cup sifted all-purpose flour (sift before measuring)
- 1/4 cup butter, room temperature
- 1 teaspoon cinnamon

- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, beaten
- 3/4 cup sugar

- 1 teaspoon vanilla extract
Chocolate Chip Skillet Cookie
